Today is National Creamsicle Day which celebrates this enjoyable frozen treat which is the perfect way to sit back, relax and cool down on a hot August day. The combination of vanilla cream and fruity ice is pure genius.
The classic Creamsickle flavor is a combination of orange and vanilla, although many other types are available today. You can find this frozen treat in blue raspberry, lime, grape, cherry and blueberry.
Creamsicles are easy to make at home. Mix together fruit juice and vanilla ice cream in a large bowl. Then gradually add milk and continue to mix. Finally pour the mixture into small paper cups and put them in the freezer. Once they are partially frozen, insert popsicle sticks into them and place them back inside the freezer. When they are frozen solid, peel off the paper cups and enjoy the creamsicles . Happy Creamsicle Day!

I do love Creamsicles but haven’t had any lately, but they’ll be sure to be on my grocery list for next week. Summer is the best time to enjoy ice cream. August is a hot month and we need something to cool off with.
I’ve been trying to stay away from ice cream, but I do cheat every now and then. I have ice cream sandwiches and Klondike bars in the freezer. I figure I deserve a reward for all my healthy eating once in a while. At least it’s not every day like it used to be. On today’s menu is:
Grilled Pizza with Prosciutto , Corn and Basil
1 can refrigerated pizza dough, preferably whole wheat
2 tbsp olive oil, divided
1 clove garlic, minced
1 c. shredded mozzrella cheese
1 cup corn kernels, fresh or frozen
1 oz. thinly sliced prosciutto,
torn in 1 inch pieces
1 1/2 c. arugula
1/2 c. torn fresh basil
Preheat grill to medium high, or bake instead
Roll out dough on lightly floured surface into a 12 inch oval. Transfer to a lighter floured baking sheet. Combine 1 tbsp. oil and garlic in a small bowl. Bring the dough, garlic oil and cheese, corn and prosciutto to the grill.
Oil the rack. Transfer the crust to the gill, Grill dough until puffed and lightly brown. Flip the crust over and spread with garlic oil on it. Top with cheese, corn and prosciutto. Gril covered, until the cheese is melted and the crust is lightly browned on the bottom. Return the pizza to the baking sheet for serving..
Top pizza with arugula, basil and pepper. Drizzle with the remaining 1 tbsp. oil.
If you don’t have a grill, place crust on an oiled baking sheet, spread garlic oil on it and top with cheese, corn and prosciutto . Bake at 450 degrees until the crust is golden on the bottom and the cheese is melted. 18 to 20 minutes. Top with arugula, basil and pepper. Drizzle with remaining oil.
To oil your hot grill, soak a paper towel with oil and hold it with tongs to rub it over the rack. Do not use cooking spray on a hot grill.
I looked for whole wheat pizza dough but couldn’t get it, so this recipe is not as healthy as it could be.
Hard to believe it’s Friday already and the end of another work week. I did hear from all of my children one way or the other and all of them are still keeping heathy and safe which is always a blessing. I didn’t get a lot done as usual, but at least I got something done. I keep moving forward one day at a time.
Today’s pictures are of some of my family who got together earlier in the week to attend a golf outing that was for a fund raiser for one of my grandson’s hockey team, I stayed home and watched DD’s dogs.

It's been forever since I've had a creamsicle, sure sounds good. Your pizza for today sounds so delicious too! Look like the family had lots of fun at the golf outing. Have a great weekend Ma :)
I too like Creamsicles but haven't had one in years. Such a yummy summer treat! So enjoyable to look at the pictures of your family having fun in various ways! Our park playgrounds have been closed since March so no fun there for the kids; of course now its too hot but I don't think they will ever be opened again here.

What a novel take on the traditional pizza! I'll bet it's delish. Seaking of delish... I don't recall having had a creamsicle since 8th grade when the ice cream truck would solicit outside the school. We called them "push-ups."
My Tom always keeps a package of Heath Klondike bars in n the freezer -- simple pleasures in these uncertain times.
