Today is National Corn Fritters Day which is a day to savor the bites of fried or baked corn batter, a mixture with corn, egg, milk and melted butter. These treats can be eaten alone or served as a side or enjoyed with of topping like syrup, powdered sugar, or jam.
Corn fritters originated in the south, but many other countries enjoy similar dishes. To celebrate head out to your local southern style restaurant or get out your frying pan and cook up some delicious fritters!

I love corn fritters and they bring back some good memories for me. One of my good friends during my school days, used to invite me over to stay the night and her mom would make corn fritters for breakfast and they were delicious.
We never had them at home so they were a real treat. I’ve made them in home for my own family, but they really never a favorite of theirs. Still I do make them now and then as a treat for myself. I use pancake mix to make my batter and here’s the recipe.
Pancake Corn Fritters
1 egg
1/4 c. milk
1 c. pancake mix
12 oz can whole kernel corn, drained.
Fluffy fritters need a light hand so don’t over beat. Drop by spoonfuls into hot oil, 1 inch deep, and cook slowly until golden brown. About 4 minutes.
Yield 20 to 24 fritters. Serve with syrup or plain. Can be an appetizer or served with dinner.
I make the whole recipe as leftovers are good reheated.
This week is to be a hot one. We started out mid 80’s and will have some days in the mid 90’s. A 90 degree day is unusual for us, and to go over 90 is rare so I’ll be thinking of ways to stay cool this week. My home has no ceiling fans to circulate the air, but I do have a couple of regular fans , so I’ll be turning those on along with the air conditioning trying to reduce the load on the air conditioning.
Other than making those fritters, I’ll definitely not be cooking much. Sandwiches and salads will on the menu.
Today is also the Full Buck Moon of July. It’s so named because a buck’s antlers are in full growth mode at this time. It’s also known as the Thunder Moon as thunderstorms are so frequent this month. Remember: we all see the same moon no matter where ever we are . So if you look at the moon, think of me as I’ll be thinking of you.

It's feeling pretty tropical here in Ohio...
I have never eaten corn fritters but imagine I would like them because I like everything else corn....corn chips, corn bread, pop corn, corn tortillas, corn casserole, corn on the cob and etc.
Thanks for the corn fritter recipe. I think I’ve had them in a restaurant once or twice. We’re growing corn at the ranch so that would be a good place to make them. I’m pretty certain we will love them!
Ah, the moon! Louis Dean and I sat outside under the gazebo frame last night for a few minutes and watched the moon. We were talking about how we see the same moon - wherever we are! I’ll be thinking about you tonight.....
I don't think I have ever had corn fritters but need to try to this recipe when it cools down. I'll be thinking of you Ma when I see the moon tonight. It is forecast to be clear so I'll be able to see it shining brightly when it comes up!

My mom used to make corn fritters for us when I was a kid. I loved them. I have never made them myself
