Today is National Fried Chicken Day, which honors a classic American dish. To make this flavorful favorite: coat a piece of chicken in home made batter and fry it. It’s easy. The result is a perfectly cooked chicken that crunchy on the out side and juicy on the inside. Yum!
While the American fried chicken that we know and love has its roots in the Southern United States, Europeans have actually been eating fried chicken since the Middle Ages. During that time cooks discovered that covering meat in flour and spices before cooking it helped to seal in the flavor and made it easier eat.
National Fried Chicken Day is a great time to try out a new recipe or visit you local fast food restaurant.

I love fried chicken and my favorite take out meal comes from KFC. But if I’m making it at home, I often make Oven Fried Chicken. It’s very quick and easy.
Oven Fried Chicken
8 pieces chicken, your choice
2 tbsp. paprika
2 c. flour
2 tsp salt
1/4 tsp garlic powder
1/4 c. butter
Combine the paprika, flour, salt, and garlic powder.Put butter in a 9 by 13 baking dish and melt.
Coat chicken with dry mixture and place in pan. Cook at 425 for 20 minutes. Remove from oven and turn chicken over. Cook for additional 20 minutes.
For years I’d make it to take on picnics. It’s good hot or cold.
A lot of people are still celebrating the long holiday weekend and many are having picnics or barbecues. We’ve had a few scattered showers, but for the most part its been hot and sunny here.
I’ve just been enjoying staying in and keeping cool. One thing I know for sure it’s a lot cheaper to cool this house than it is to heat it.

Just had fried chicken yesterday for lunch. There is a fast food place called "Bushes chicken" and I swear they have the best chicken I have ever eaten, so get a breast and a side of green beans....yum.
The one and only time I tried to fry chicken (ca. 1977?) I badly burned my forearm. This oven-fried recipe sounds delicious … as soon as the temps cool and I dare turn on the oven!
