Today is Hammock Day which reminds us to slow down, breathe easy and enjoy these beautiful summer months. A hammock is often seen as an symbol of summer, leisure, relaxation and simple, easy living.
It’s a day to take a few minutes to sit back and unwind on a hammock. There is no better way to celebrate. Grab a cool drink and a good book, or lie back for a much needed nap.

These summer days do have a way of slowing me down. If I got any slower I’d not be moving at all. The heat of the past few days made it impossible for me to do much at all. But today we’re to have some relief here so I should be able to finally get outside and do some yard work.
It’ll be in the mid 70’s, which is almost perfect weather in my books, but we do have a possibility of rain, so we’ll see just how much actually gets done. It may get done tomorrow and not today. One thing I know for sure is that it’ll feel great to get outside again and enjoy it. I don’t have a hammock, but do often take a afternoon nap. Ha!
I don’t like to bake anything or use the oven when it’s hot so I made up some rice pudding over the weekend for dessert and thought I’d share the recipe today. I used a quick and easy recipe using minute rice.
Minute Rice Pudding
3 c. milk
1 c. minute rice
1/4 c. sugar
1/4 c. raisins
2 eggs, slightly beaten
1 tsp. vanilla
cinnamon
Combine all ingredients in a pan except for vanilla and cinnamon. Bring to a boil stirring constantly. Then lower heat and simmer about 6 minutes, stirring occasionally until mixture thickens and the rice is tender. Do not boil. Add vanilla.
Remove from heat to cool and sprinkle with cinnamon. You can serve it warm, but I like it cold, especially on hot days.

Haven't had rice pudding in a really long time...sounds so good.
I haven't had rice pudding in a long time. Always enjoyed the ones my mom would make. I think lying in a hammock enjoying a summer nap would be a great way to spend today, but alas, off to work in a few minutes :)

I don't think I've had rice pudding since I was a child! Recall trying to push the raisins out of the way and hide them. Ha.
Still, it's a comforting dish. Maybe that's why I've seen it in hospital cafeterias?
