Today is National Raspberry Cake Day which honors Raspberries, a traditional midsummer crop. They need ample sun and water for optimal development. On Raspberry Cake Day people make their preferred cake and add raspberries to it. Whether it’s a cheese cake, a fruitcake, a yellow cake, or a pound cake, adding raspberries make everything better.
Raspberries have a lot of nutritional value. They contain Vitamin C, manganese, and dietary fiber to help with digestion. With so many vitamins and minerals, raspberries are one of the perfect fruits to add to any sweet concoction.
To celebrate you can try your baking skills at making a chocolate raspberry german cake, a raspberry cheese cake her a raspberry vanilla swirl cake or visit your local bakery.

I do love raspberries and most any fruit so I’ll be celebrating today. I like to buy little sponge cakes at the store and topped them off with some fresh raspberries. I also love donuts with raspberry filling so I plan to get some of those soon. Raspberry jam is great too and it’s a great topping or filling. You can use it in between layers of cake to add some extra flavor.
Summertime here in Ohio, is all about fresh fruits and vegetables Even though our roadside stands were late in opening, they do provide of lot of homemade happiness.
We are to be having a heat wave here for a couple of days so I’m staying in, keeping cool. I won’t be doing much at all or going any place and I certainly won’t be turning the oven on. The heat can be brutal, so try to keep cool everyone and remember to drink your water.
With that said I thought I share a recipe for homemade raspberry tea. It’s refreshing and delicious.
Raspberry Iced Tea
1 gallon water
3 gallon size tea bags
1 c. fresh raspberries
1/2 c. sugar
1/2 c. lemonade mix such as Country Time
Ice Cubes
Bring water to a boil in a large pot and add the tea bags, raspberries and sugar. Stir and let mixture steep until desired level of tea flavor is reached. Usually 3 to 5 minutes. Remove tea bags and berries and stir in lemonade mix. Pour tea into a pitcher and add ice to cool.
We’re expecting temps in the high 90’s with a heat index in the 100’s and the folks on the radio station were telling jokes yesterday, so I thought I’d share one with you.
What is the coldest letter in the alphabet?
The letter B, because it’s right between A and C.

Summertime provides a lot of homemade happiness...
I do like raspberry iced tea; so refreshing on a hot summer day! I can't remember the last time I ate some raspberries. I'm going to have to remedy that soon!

Raspberry tea is one of my favorites! I love flavored herbal tea and nearly always garnish it with fruit! I plunk a strawberry or a few raspberries, slices of fresh peaches - whatever fruit I have on hand in my tea glass. By the end of the day I have a fruit salad sitting at the bottom! I use a great big yellow plastic Dickies cup that holds a lot!
It’s hot in Texas but not as hot as it usually is! We have yet to hit the 100 degree mark! Sometimes we hit that in May! So I can’t complain about the heat!
Raspberries are a treat! Family hates blackberry (seeds), but love raspberries.
We are in desert So. Calif. and we have had a lot of heat, too. Last year it was up in the 100s for two weeks. We covered direct sun plants with sun shade, so they didn't get crispy. Watered 2x each day. Dry heat, but still dry desert heat and winds sucks water from the air.
Now I'm wondering if it isn't raspberries Tom was trying to recall -- picking as a child in Illinois. Cute, cute joke!
