Today is National Sibling Day which is a day to appreciate and cherish your bothers and sisters. Siblings are truly a special blessing . They are often our best friends and supporters through life.
It’s a great time to be thankful for our siblings and to let them know how much they are appreciated.

To the outside world we all grow old. But not to brothers and sisters. We know each other as we always were. We know each other’s hearts. We share private family jokes. We remember family feuds and secrets family griefs and joys. We live outside the touch of time.

I grew up with two sisters and I am very blessed to still have one of them in my life. The other passed away a couple of years ago now and is truly missed. She was also my next door sister for over 20 years. I’m very thankful for them both.

Its midweek and time to cook up something new to have for dinner here and I’m going to go with an old fashioned recipe called Creamed Chipped Beef on Toast. My mom used to fix it for us and I haven’t had it in quite awhile. You can also served it over warm buttermilk biscuits which I do happen to have on hand. Some people like it for breakfast, but we always had it for dinner.
Creamed Chipped Beef
4 tbsp. butter
1/3 c. flour
3 c. milk
1 tsp. pepper
4 1/2 oz dried beef, cut into strips
Toast slices or biscuits if desired
Melt butter in a skillet over medium heat until bubbling, stir in flour and then add milk, whisking until flour is mixed in. Stir constantly until sauce has thickened.
Add pepper and strips of dried beef to sauce mixture until beef is heated through. Spoon over toast or biscuit halves . I’ll be having mine with a side salad to complete the meal.
The picture below is of my sister and BIL when we celebrated our birthdays last year, which reminds me that I do have a brother too.
A sister is a little bit of childhood that can never be lost.

Family is one of the most important things in my life.
Do not have any siblings and have always felt I missed out but have had some good friends. I have always heard that recipe called "Shit on a shingle" have not idea why they called it that and I have never eaten it. Had to laugh at how many days until summer because we are in the 90's now but it is true summer here is when it is 105 and over.
Thank you for the reminder about Sibling Day! I’m going to open my laptop and share a photo of all my siblings together. I only have one photo! Loved seeing the photo of you and your sister. I’m grateful that we haven’t had any sibling losses yet.......
Your chipped beef sounds like a perfect way to use up the last piece of the NY strip steak I cooked. Steak is so expensive and I hate to waste food.

I bet all your children are appreciative of their siblings too! I like that recipe for the chipped beef on toast. My mom made something similar.

How blessed to have a sister … and nearby, to boot! Sibling Day is Terri's prompt for the Wednesday Medley; despite having no siblings of my own I may participate later today, just for fun. My dad loved that chipped beef dish; that was his last meal.
PS - Your creamed spinach was such a hit here. We've had it twice, and last night Tom suggested I buy more. :)))
Siblings! I had three brothers and one sister, but 2 brothers died in their 40s. How I miss them!
Chipped beef was a staple when we had young kids and low $$. Mashed potatoes and toast with veg. They still love it, have no idea that we were trying to make a dollar stretch to seem to be two!
