Today is Earth Day which is intended to inspire awareness and appreciation for the Earth’s natural environment.
The first Earth Day took place in 1970. After witnessing th oil spill in Santa Barbara, California, U.S. Senator Gaylord Nelson organized a grassroots environmental teach in on college campuses across the country. Many people believe that this first Earth Day celebration marked the bringing of the modern environmental movement.Now, more than 1 billion people in 175 countries participate in Earth Day events.
To celebrate, plant a tree, help clean up a beach or a park. In all things of nature there something truly marvelous Do something to honor the earth.

For me, there is no better season to celebrate the beauty and wonder of our Earth than Spring. Everything is coming to life again after a long winter. Every day I see something new blooming and growing.
This week I’ll be focusing on what I can do to clean up the yard to get it ready for mowing. There are still plenty of sticks and branches out there to pick up and some leaves that managed to stick around over the winter too. I’m thinking in just a few days, it will be time to cut the grass. I know some that have already done so.
With the warmer weather will also come a different way of eating. There won’t be as many soups and stews on the menu and more salads and sandwiches.
This salad is on my list to make soon
Spinach Pasta Salad
Serves 4
1/2 c. bowtie pasta
1 1/2 tbsp. extra virgin olive oil
1 tbsp. white wine vinegar
1/2 tsp Dijon mustard
1/4 tsp pepper
1/8 tsp salt
2 garlic cloves minced
3 c. baby spinach
1/4 c. chopped red onion
Cook pasta according to package directions. Drain and rinse with cold water.
Combine olive oil with mustard, pepper, salt, and garlic. Stir well with a whisk.
Add the vinaigrette mixture and spinach to the pasta and toss to mix.
I like to sprinkle my salads with some bacon bits too and this salad sounds like it could use some.
