Today is National Peanut Butter and Jelly Day which celebrates the popular peanut butter and jelly sandwich. The average American consumes 1,500 peanut butter jelly sandwiches before the age of 18. The combination of sweet jelly and salty peanut butter has been a staple in school lunch boxes; for over 50 years.
According to one story, soldiers invented the sandwich during WWII. They decided to combine their bread, jelly and peanut butter rations into a fabulous new treat. When the soldiers returned home after the war, peanut butter and jelly sales soared.
Peanut Butter and jelly aren’t just found in sandwiches, there’s Peanut butter and jelly cookies, cakes, pies and ice cream.
To celebrate National Peanut Butter and Jelly Day, make this iconic American sandwich for lunch.

There is no doubt in my mind that Peanut Butter and Jelly is not just for kids. I still love them and I’ve been around for more years than I care to talk about. They are quick and easy and always satisfying too.
Now that April has arrived, I’m going to make good use of my oven before it gets too hot to turn it on. And since I most always have a few ripe bananas on hand, today’s recipe is for a different take on Banana Bread using peanut butter and jelly.
Peanut Butter and Jelly Swirled Banana Bread
1 1/2 c. grape jelly
1 egg white
1 2/4 c. flour
1 tsp baking soda
1 tsp. salt
1 tsp. cinnamon
3 recipe bananas mashed
2/3 cup peanut butter, crunchy is best
3/4 c. sugar
1/4 c. butter, softened
2 tsp. vanilla
1 tsp lemon juice
Preheat oven to 350 degrees. Grease and flour a 9 by 5 inch loaf pan online with parchment paper so it over hangs on the sides.
In a small bowl whisk together the jelly and egg white. Set aside.
In medium bowl whisk together flour, baking soda salt and cinnamon.
In separate large bowl, mix bananas, peanut butter, sugar, butter. vanilla and lemon juice until smooth. Stir in the flour mixture, mixing until fully blended.
Pour half the batter into prepared pan, then dollop in a few spoonfuls of the jelly mixture. Pour in rest of batter and smooth over the top. Finish with a few more large spoonfuls of the jelly mixture. Use a butter knife to swirl the jelly into the batter.
Bake 45 to 50 minutes or until tester inserted in the center comes out clean. Let cool in pan 10 minutes then remove and let cool completely before slicing and serving.
Today is my day to take stock of how things are going. Making lists of all sorts, of what I need to do and to get. Easter is now only a few weeks away. I’m also getting my hair cut this afternoon which always feels good.

Yes, there is nothing like a peanut butter and jelly sandwich...I like to use just one slice of bread and fold it over:)
I love pb&j and always have. Back in the 50s & 60s it wasn't considered a healthy alternative for lunch meat so my Mom would never pack a pb&j in my lunchbox. But by the time my kids were born, pediatricians told us moms how nutritious peanut butter really is... so my kids ate a bunch of them. Now, with my diabetes, I don't eat many sandwiches anymore and when I do it's usually some sort of ham because of the low carbs.... but a pb&j sandwich with some potato chips always was my all-time favorite. I keep a planner on my kitchen calendar by the cookbooks I’m currently using. If I do a task not already on the planner, I write it in and check it off! Kind of silly but I like seeing a visual of accomplished chores.
I’m on my third cup of coffee and the day stretches before me. My only housework chore is vacuuming today. I’ll be getting out to search for Tuesday Treasures and go to the bank. This afternoon I’ll get Louis Dean and we will go walk. I love Tuesdays! Hope you have a really good one!
Interesting, the origin of PB&J! As a child I certainly consumed my share of that goodness. Come this fall, I'll definitely be trying this twist on traditional nut bread!
