Today is National Zucchini Bread Day which is a day to enjoy this delicious type of quick bread that is sweet and moist. The primary ingredient is zucchini, but many people like to add many other ingredients like dried cranberries, orange zest or cinnamon to make the bread spicy.
Zucchini is actuary a small summer squash. In addition to being used for bread, it’s great when grilled or incorporated into stir fry dishes. You can steam it, fry it, bread it, or grill it. Any way you cook zucchini, it’s healthy and delicious

I often wonder just how these food holidays come into being, especially days like this when Zucchini is not in season. It is, however, available in the grocery store most any time of year. I do like to make quick breads as they are so very easy. There is no waiting for the dough to rise and there is no kneading to be done.
There are many ways to make them, so I looked for and found a recipe for a different way to make Zucchini bread.
Zucchini Carrot Bread with Walnuts
10 oz zucchini
10 oz. carrots
2 c. sugar
3 c. flour
1 c. cooking oil
2 tsp baking powder
2 tsp. baking soda
3 tsp. cinnamon
3 tsp. vanilla
3 eggs
6 oz. walnut pieces, chopped.
Wash and clean zucchini then shred it into a large bowl. Wash and peel carrots and shred into same bowl. Cover and set aside.
In a large bowl, add flour salt, baking powder, soda, and cinnamon and mix together. Set aside
In a seperate bowl, add sugar, eggs, oil and vanilla. Mix until the consistency of thick pudding.. Set aside.
Grease and flour two loaf pans. Preheat oven to 350 degrees.
Add sugar mixture to flour mixture and mix thoroughly . Add shredded zucchini and carrots. Add walnuts. Fold in all ingredients until evenly mixed.
Fill loaf pans evenly and bake for 55 minutes or until toothpick inserted into center comes out clean. Remove from oven and cool 1 hour before slicing .
I haven’t been baking or cooking much at all here this week with the addition of the yard work, but I do happen to have a small summer squash in the fridge so I’m thinking I should do something with that today. I also have some spinach and tomatoes that need to be used up. So it looks like I'll be doing some sort of stir fry with a salad to use them up.
On the bright side all went well with my appointment with the management yesterday. It looks like the changes that will be coming will be only good ones.

Vegetables are a must, good and good for you too!
Glad the meeting went well, Ma! I do like zucchini. We've been eating a lot of it these days with our healthy lifestyle and as you know, since I featured it on my blog, we even made zucchini noodles. Those are fast becoming a favorite of ours.

Now I'm growing hungry. Thank goodness, there's a mom-and-pop farmer's market nearby!
It's a little late in the year to be turning on the oven, but this recipe sounds like a keeper.
