They say that it’s ok to send a virtual high five too and that’s what I’m doing today. Sending High Five to all my family and friends!
High Five!
I’m celebrating and am very thankful you all are a part of my life!
I’m happy to say I made it over the hump of this week and am now on the downhill slide to the weekend. Today I’ll be mailing Easter gifts to those of my family that live out of town and I’m also preparing for my Sister’s birthday which is tomorrow. I’m making soup for lunch and also a Hungarian Nut Cake for her birthday.
Here’s the recipe for the soup:
Slow Cooker Minestrone Soup
1 c. carrots, sliced
1 c. celery, sliced
1 1/2 c. onion diced
28 oz. can diced tomato with juices
2 Tbsp. tomato paste
1/2 c. parmesan cheese
2 Tbsp minced garlic
2 bay leaves
1 1/2 Tbsp. Italian seasoning
4 c. vegetable broth
2 c. water
15 oz. kidney beans, drained and rinsed
15 oz. cannelini beans, drained and rinsed
1 c. diced zucchini
1 1/2 c. ditalini or other small pasta
1 c. cut green beans
1 1/2 c. baby spinach, chopped
Add all ingredients in slow cooker except for the zucchini, green beans, baby spinach and pasta. Stir to combine, cover and cook on low for 6 hours, or high for 3 hours.
30 minutes before you want to serve the soup, add zucchini, pasta, green beans and spinach. Cook until pasta and vegetables are done. Serve with parmesan cheese on top and enjoy.
They took me out to eat last year for our birthday celebration, tomorrow is going to be my treat!

I love that quote from Danny Thomas! When I saw him in that movie with Doris Day...You know the one I keep talking about, I'll See You In My Dreams. I looked up more info on him...I need to do a post about him, he was a truly great guy! High five!
