Today is National Spinach Day which celebrates healthy and nutritious Spinach greens. Popeye the Sailor touted the value of spinach and nutritionalists agree, that Popeye is 100% correct!
Spinach is easy to grow and it’s hardy. You can plant as soon as the ground can be worked in Spring. You can use it in everything from soups to salads, casseroles, omelets and much more. It can be cooked or eaten raw.
So make Popeye happy today and eat some spinach!

Tuesday isn’t so bad…it’s a sign that I’ve somehow survived Monday.

They say Tuesdays are the most productive day of the week, so we’ll see how that goes. I happen to love spinach and often use it on a sandwich instead of lettuce. I use it in salads, frittatas, soups and as a side dish to have with meals. Today’s recipe is for a side.
Parmesan Creamed Spinach
1/2 lb. sliced fresh mushrooms
1 small onion, chopped
2 tsp. butter
2 tsp. olive oil
1 clove garlic, minced
1/4 tsp salt
1/4 tsp. pepper
9 oz. fresh spinach
4 oz cream cheese cubed and softened
1/2 c. shredded Parmasan Cheese
In a large skillet, sauté mushrooms and onion in butter and oil until tender. Add garlic, salt and pepper, cook 1 minute longer.
Add spinach and cream cheese and stir until cream cheese is smooth and spinach wilted. Sprinkle with parmesan cheese.
Makes 4 servings.
We're to be close to forty degrees today and tomorrow we should near fifty We are seeing more warmer days than not, so that is a good thing.

Spinach is good and good for you too!
Just last week I fix fresh spinach and I loved it. I had always had it from a can but decided to try it fresh yahoo..
Spinach is one of my very favorite veggies.... I often eat it for breakfast, flash fried in a tiny bit of olive oil and some onions & seasonings. Yummo! :-) Love, Andrea xoxo
