Today is Baseball Opening Day which is often hailed as the true beginning of Spring. Opening Day is one of the most important days of the year for baseball lovers across the country. For the next 6 months, over 750 players on thirty Major League teams will compete in over 2,000 games.
Baseball has been revered as America’s National Pastime for over a century. Since 1910, every President except for Jimmy Carter has thrown a ceremonial first pitch for Opening Day, the All Star Game, or the World Series.
To celebrate Baseball Opening Day, tune in to watch a game, head outside to throw a few pitches or have some hot dogs, the traditional ballpark snack. Play ball !

Today’s pictures are of one of my grandson’s ready for a baseball game last year. From what I hear they have already been practicing to get ready to play again this year. I’m not sure when his opening day is, but we’ll be hoping the weather cooperates.
Our own home team, the Cleveland Indians, will be having their home opening day in Cleveland on April 1st and they say it’ll be a chilly day for baseball. But then I won’t be going to game, but sitting home and watching it on TV where I’ll be warm and cozy.
Another sign of Spring is the Spring concerts that the grandchildren have and I was blessed to be able to go to Mr. Wonderful’s concert yesterday evening. All the elementary schools here have their concerts in our high school auditorium and it was full to bursting last evening.
I may have a hot dog for lunch today in honor of opening day, but I am cooking dinner and here’s another one pot recipe to try. I had leftover pork roast in the freezer so I looked for ways to use it up.
Pulled Pork and Bean Chili
Makes 8 servings
1 can chili beans, drained
2 tbsp olive oil
2 onions chopped
3 cloves garlic, chopped
2 medium green peppers, chopped
2 tsp. chili powder
1 tsp. cumin
1 can diced tomatoes
2 c. pulled pork, regular or barbecue
3 c. chicken stock
1 tsp. hot sauce, optional
1 can kidney beans, drained
1 c. sour cream
1 c. shredded Cheddar cheese
3 Tbsp. chopped cilantro, optional
Heat oil in a 4 qt. sauce pan. Add onion, garlic, pepper and dried seasonings. Cook 5 minutes stirring often.
Stir in tomatoes and pulled pork. Add chicken stock, hot sauce and beans. Bring to simmer. Cook about 20 minutes . Serve topped with sour cream, cilantro and cheese.
I won’t be using the hot sauce or cilantro because I don’t care for them, but it still sounds very good.

Play Ball!
Such a little guy and in most of the pictures he looks sad, maybe he is just camera shy.
Another good recipe you shared, Ma! So cute with your grandson from last year. He looks like he is intent on what he is supposed to be doing.
Every year since we moved down here to Phoenix, we say that we are going to go to one of the spring training games as a lot of teams do their spring training here. Every year we have the best intentions, but this year like years before, e didn't make it there. Maybe next year. Our team the Diamondbacks might have their home opener today. I think I saw something on the news. The stadium is enclosed so it is comfortable in hot summer months and I think also has a swimming pool in it, though I don't know who is eligible to swim there.
Yum on the hot dog! A perfect way to welcome in baseball season.

Oh my word, that last photo is precious! That could well be on a Hallmark card! I was never a fan of baseball, unlike my best friend in high school. Were it not for Liz, I wouldn't know first from second. LOL.
