Life is filled with ups and downs . Some days are good and some days are bad days. Every now and then a day comes along where everything you do goes well.. Today is that day!

There are only two days in the year that nothing can be done. One is called Yesterday and the other is called tomorrow. Today is the right day to love, believe, do and mostly live.

We should never let what happened in the past spoil what we have right now. A new day is another chance to get it right. Mistakes happen to all of us, but thankfully we have another day to move on and start again.
As usual, I’m cooking for the weekend today so am sharing what I’m fixing. Tomorrow is St. Patrick’s Day and since I have leftover roast in the freezer I’m making a Shepherds Pie. It’s an authentic Irish Dish and is considered a tasty alternative to Irish Stew oar corned beef and cabbage. It is traditionally made with lamb but any kind of leftover roast will do.
Shepherds Pie
1 onion, quartered and sliced
1/2 c. sliced celery
1 tbsp butter
2 c. diced leftover roast
2 c. brown gravy, homemade or prepared from mix
1/2 c. sliced cooked carrots
1 c. peas, cooked
salt and pepper to taste
2 c. mashed potatoes
Heat oven to 400 degrees. Grease a 2 1/2 quart baking dish. Melt butter in a skillet, add onions and celery, and cook until tender. Add diced roast along with gravy, carrots and peas and stir to blend. Season with salt and pepper.
Transfer the meat and vegetable mixture to the prepared baking dish. Spoon potatoes evenly over the meat and vegetables. Bake at 400 degrees for about 30 minutes or until potatoes are browned and gravy is bubbling.
You can also add 1/2 c. of shredded cheddar cheese to the mashed potatoes for an added treat.
For dessert I’m making a bowl of lime jello mixed with pineapple. Which looks like nuggets of gold floating in a sea of green. It’s a tradition here at my house.

It's Saturday and I'm preparing for Sunday!
I needed this post today, Ma. Had a rough couple days at work so glad to know this is a day I'm going to be getting things right! It is also a good reminder that even though we do make mistakes, there are days we don't and that we can learn from them.

I so agree with you, MA. My view is.... might as well be positive cos it costs the same as being negative. Yes, negative things happen in a person's life and sometimes we can't stop that. And yes, negative things have happened in a person's life and we certainly can't change the past. But we can get up in the morning, put a smile on our face, and share those smiles with folks who might need one. It's been too long since I enjoyed Shepherds Pie! Only two days in the year … yesterday and tomorrow: That's a GREAT motivational 'ism'!

Shepherds pie is a favorite at my house. We have it on Justin and Darian's birthdays if we eat at home. Last year Justin took me out on my birthday and took home the pie I had baked!
