ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Pecan Day which is a commemoration of the planting of a pecan tree by George Washington at the Mount Vernon estate on March 25th, 1775. The pecan tree was gifted to him by Thomas Jefferson , who had planted a few pecan trees from the southern US at Monticello, Virginia.
The pecan tree, native to southern North America, is sometimes called America’s own nut. First cultivated by Native Americans, it has been transplanted to other countries, but has failed to achieve wide use or popularity outside the US.
Pecans can be served in a variety of ways. They are good eaten by the handful to munch on for a snack, or by adding them to salads, eating pecan crusted fish for dinner, making a delightful pecan pie or having pecan ice cream.
Pecan Day is a rather nutty day. It's a day to celebrate and enjoy some tasty pecans.

THOUGHT FOR TODAY
Every day is an opportunity to make a new happy ending.

It’s Monday, a new week and a new beginning. I’m always happy to greet a new day. It seems full of endless possibilities. I had a good weekend and hope you did too. It won’t be long now and we’ll see blooms like the ones shown above.
Pecans are one of my favorite nuts. They are good in candy and desserts like pecan pie. I like butter pecan ice cream too. I also love to snack on them so today’s recipe for roasted pecans.
Sea Salted Roasted Pecans
2 c. pecan halves
3 tbsp. butter melted
1 1/4 fine sea salt
Preheat oven to 325 degrees. Toss pecans and melted butter in medium bowl to coat. Add salt and toss. Spread pecans in a single layer on rimmed baking sheet. Bake until fragrant and slightly darkened in color. About 15 minutes . Cool before eating.
They say Pecan trees will grow in southern Ohio, but here our winters are much too harsh for them. Most of them come from Georgia and Texas, but they are also grown in Alabama, Arkansas, Arizona, California, Florida, Kansas, Louisiana, Missouri, North Carolina, New Mexico and Oklahoma. We do have walnut trees here though, and that is my second favorite nut to eat.
This week won’t be much different than last week as I continue to work on my Spring projects , cleaning and painting. There is still a lot to do with both, but progress is being made surely but slowly.
I hope you all have a GREAT new week ahead. Happy Monday!

I'm nuts about nuts! Good and good for you too.
Love the picture and quote to be thankful, great words.
I too like pecans but I don't like pecan pie, LOL. I think its too sweet. I'll have to see what part of the state they grow here in. Might be interesting to see what the trees look like.
