Today is the Spring Equinox, the first day of Spring. Get ready to pack away winter clothes, because soon enough we’ll be enjoying warmer weather, much longer days and arrival of flora and fauna.
The word equinox means equal night, referring to the fact that days and nights are approximately equal everywhere and the sun rises and sets due east and west.
The Spring equinox brings sure signs of changing seasons, from blooming flowers to chirping birds. It means the beginning of nature's renewal in the Northern Hemisphere.

I am celebrating today and hope you are too After a very long winter, I’m happy to say it is going to be close to 50 degrees today and with that we’re to have some rain too.
There have been a lot of birds in the trees around here and bird song fills the air when I walk outside, but I’ve yet to see a robin.
The hours of daylight are slowly but surely getting longer each day. It’s so nice to be able to feel more energy and not feel like I should be going to bed at 6 in the evening. Our nights are still in the 30’s and most days in the 40’s but that too will surely but slowly change.
It’s midweek and time to cook up something new. Today is also my day to get out and run errands and do grocery shopping so I’ll be using the crockpot.
Easy Crock Pot Spaghetti and Meatballs
Serves 6
1 24 oz. jar spaghetti sauce
4 c. water, vegetable or beef broth
1 lb. box spaghetti
24 frozen meatballs
olive oil
1 1/2 tsp. Italian seasoning
1 1/2 tsp. minced garlic
1 1/2 tsp dried basil
Pour spaghetti sauce in slow cooker. Add 4 cups water or broth, your choice. Add garlic, Italian seasoning and basil.
Break spaghetti noodles in half and put in a ziplock bag then drizzle with olive oil, making sure all the noodles are coated. Remove noodles from bag and put them on top of sauce mixture; and gently push them down so they are in the sauce.. Then top with frozen meatballs. No need to stir these in .
Cover and cook on low 2 to 5 hours until noodles are soft and meatballs heated through. Add extra water if needed. Give it all a gentle stir to combine and then serve.
This is my first time using this recipe so we will see just how it turns out.

Time to celebrate !
That top picture captures spring in all it glory. Here you are going to reach 50 and we are running 80 yet for us this is our spring.
All the robins are down here in eastern Tennessee! Spaghetti sounds good...just may have to do that! Happy Spring!
I like that recipe for the spaghetti and meatballs in the crock pot. I think we'll try it the next time we have the family over for dinner.
Happy spring, Ma! I too like the longer days of light. Now hubby on his drive to and from work is driving in the light instead of the dark like before. That's always better on one's eyes I think!

Oh Pam, you're going to make a pasta lover out of me yet! I'm definitely clipping this one for Tom. I never thought about the definition of the equinox before … makes sense, and now I'm feeling a wee bit smarter.
