Today is No Brainer Day which is a day just to be happy. It’s a reminder that most things are simple and that many problems we encounter have easy and obvious solutions.
No brainer is a term that is used to denote a problem that allegedly has a very easy solution obvious to all. If you have a problem that requires thinking or analysis of any kind, today is not that day. So sit back and give your brain a vacation day and celebrate obvious choices. Be creative and do something that does not take a lot of thought.

Most of what I do every day, does not require a lot of thought. It seems I do the same things over and over and they’ve become a habit for me, so I really don’t think about them when I do them. It’s a rare day for me if I have to do a lot of thinking. No brainer days are a way of life for me, more than not.
I’ve learned that if problems come my way, there is always a solution and if it is something I cannot fix myself, I turn it over to the good Lord, for nothing is impossible to Him.
It’s midweek and time to get busy here, and I have to cook something different for dinner tonight. I put the last of my leftover beef roast in the freezer yesterday for a meal later on. I happened to have a bag of frozen vegetables on hand so I looked for ways to use it and this is what I found.
Pasta with Vegetables
12 oz. pasta of choice, I’m using noodles
2 tbsp butter
1/3 c. parmesan cheese, plus more for serving
1 cup mixed frozen vegetables
Salt and pepper to taste
Crushed red pepper, optional
Cook pasta according to package instructions, Drain and reserve 1/2 c. cook cooking water. Return pasta to the pot. Add butter, parmesan cheese, vegetables and salt and pepper. Add the cooking water is small increments until saucy. Stir to combine and adjust seasonings as needed. Makes 6 servings. It can be used as a side dish or for a meatless meal on its own or you could add some cooked and cubed chicken to mix if you’d like. I don’t always have meat at every meal, so for me it’s good on it’s own, served with warm crusty bread and a fruit salad.
On the news this morning I heard it is also Strawberry Day. Strawberry season is in full swing in Florida and they say that 75 percent of our domestic strawberries come from there. There is even a strawberry festival. It is wonderful to think of things growing and soon they’ll be on their way here to Ohio.
It’s the simple life for me! Keep it simple, make it fun! KISMIF!

Think Spring !
No-brainer Day sounds delightful. Whimsical! Lately I've caught myself over-thinking situations quite out of my control, and have to remind myself to turn it over.
I'm going to show this veggie recipe to my pasta-loving hubby. There's usually no fewer than 5-6 containers of pasta-something-or-another in our freezer. Happy 'Hump Day'!
I like that KISMIF. That's a great motto! I like the idea of a No Brainer Day. I'll save it and have it on Sunday, my next day off :)

I love simple living! It’s hard to keep your life simple in this day and age but I’m trying my very best!
My days are No Brainer Days too, MA. I think I've lived enough life that there's little that can come my way that I don't have a trick in my bag for. You know what I mean? And "not thinking" is something I cherish, as my mind can get me in trouble (worrying, fretting, etc.). I always tell everyone that I don't have a need for any more cookbooks.... all the recipes I'll ever need, for the rest of my life, I have in my head already. :-D Love, Andrea xoxo
