Today is Groundhog Day which according to folk lore, if a groundhog emerging from its burrow on this day fails to see its shadow, it will leave the burrow, signifying that winter will soon end. If on the other hand the groundhog sees its shadow, the groundhog , it will supposedly retreat into its burrow and winter will continue for 6 more weeks.
The largest Groundhog Day celebration is held in Punxsutawney, Pennsylvania, where crowds as high as 40,000 have gathered to celebrate this holiday since at least 1886. This holiday began as a Pennsylvania German custom and has its origins in ancient eastern Europe weather lore.
February 2nd is also known as Candlemas, which is halfway between the winter solstice and the spring equinox. One of the earliest references to predicting the weather can be found in an old English song:
If Candlemas be fair and bright
Come, Winter, have another flight
If Candlemas brings clouds and rain
Go Winter, and come not again.
Today is also Bubble Gum Day and Heavenly Hash Day.

I think we are all hoping for an early Spring and look forward to seeing what the Groundhog has to say, but no matter what I’ve found that there is always 6 more weeks of winter. Some winters are better than others with less snow and cold, but so far we have had a lot of both.
Since it is also Heavenly Hash Day, I thought I should clarify that it is a fruit salad bound with sour cream or whipped cream or a chocolate confection filled with marshmallows and nuts, and not your usual kind of hash made with corned beef and potatoes.
Heavenly Hash Fruit Salad
8 oz. pineapple chunks, drained
10 oz maraschino cherries, halved
3 medium bananas, sliced
1/2 bag miniature marshmallows
12 oz. Cool Whip
2 or 3 drops almond extract
Walnuts or pecans, and/or coconut, optional
Place all ingredients in bowl. Gradually add and stir in Cool Whip to desired consistency. Cover and refrigerate until ready to serve. Makes 6 to 8 servings.
Heavenly Hash Candy
Melt 12 oz. of chocolate chips and 2 tablespoons of butter over low heat. Remove from heat, add 1 can of sweetened condensed milk. Stir until smooth. Add 10 1/2 oz. of marshmallows and 1 cup of nuts. Stir until coated. Spread in a 13 by 9 pan that has been sprayed with no stick spray. Cool, cut into bars. Picture shown above.
We’re to have a partly cloudy day so I’m not sure if the groundhog will see his shadow or not. As I type this up, it is still dark out. Here in Ohio we have our own weather prognosticator, Buckeye Chuck, and his prediction is often different from the one that Punxsutawney Phil gives.

Alas, 6 more weeks of winter...
I saw that the groundhog predicted an early spring. I hope so for you parts of the country that have been so cold lately! I didn't know that about Candlemas, very interesting!
