Life is a Special Occasion!
Today is Lincoln’s Birthday, which honors the 16th President of the United States. It’s the anniversary of his birth on February 12th, 1809. He served as President from March 1861 until his assassination in April 1865. Lincoln successfully led the Unites State through the greatest constitutional, military and moral crisis, the American Civil War.
Abraham Lincoln was also known as Honest Abe and The Great Emancipator, two titles he fully lived up to during his political career. He maintained the Union during the Civil War and emancipated many slaves.
We celebrate his many accomplishments today.

I’ve always looked up to Abraham Lincoln. He and John F. Kennedy have to be two of my favorite Presidents. Lincoln came from such humble beginnings, he gave hope to all that it’s not what you have in material things that counts. Anyone can be great. Money cannot buy greatness.
Today is Tuesday and once again, it’s my day to make lists and set my goals for the rest of the week. It’s the only way I keep on track here. I may not get it all done, but I do keep on keeping on. Slow but sure it will get done.
It’s also time to cook up something new. All my weekend leftovers are gone. This easy dinner is one of my go to week night meals. It’s made with a chewy pasta and gooey cheese balanced out with a helping of veggies and meat. Some call it goulash or Hamburger helper.
Southwest Skillet Ragu
Serves 4 to 6
1 c. elbow macaroni
1 lb. ground beef or turkey
1 onion, diced
1 med. sweet bell pepper, chopped
8 oz, mushrooms, quartered
2 cloves garlic, minced
1 tbsp. chili powder
1 tsp. cumin
1 tsp paprika
1/4 tsp cayenne or red pepper flakes, optional
28 oz. can diced tomatoes
1 c. shedded cheddar cheese, plus more to serve
Salt and pepper
In a pot of boiling salted water, cook the pasta until still a little chewy. Scoop out and save 1 cup of the liquid, then drain the pasta.
While pasta is cooking, heat a tsp of olive oil in a skillet deep enough to hold everything. Add the meat, and cook about 8 minutes. Then cook the onions until they are beginning to brown and add the mushrooms until they turn brown. Add the peppers and cool until softened. Stir in the spices and good until garlic is fragrant.
Pour tomatoes with juice into pan and bring to a rapid simmer about 5 minutes. Stir in cheese and the pasta and stir until cheese is melted. Add some of the reserved cooking water if you like a thiner ragu. Spoon into individual bowls and top with an extra scattering of cheese and serve.
I’m going to try and make all in one pot and cook the pasta right in the same pot. I’ll probably have to add more liquid.
