Today is Internet Friends Day which honors friends we have met on the internet.  An internet friendship is a form of friendship which takes place exclusively over the internet.  This may evolve into a real life friendship.  Internet friendships are similar in context to pen pals.

 Thanks to blogging I’ve met friends from all over the world.  They live in places I’ve never been to and have lifestyles different from mine.  But because we have something in common, we’ve developed a friendship over the years.  I’ve been blogging for about 15 years now. I started as a way to keep in touch with my family but along the way I met many new friends.

Not everyone you meet on the internet is going to be a good friend, but thankfully I’ve only met good people.  You do have to be careful about how you use social media.

I have some really good friends, and some of these I’ve never met and probably will never do so, but still they are important to me and so today I would like to thank those that are a friend, You all mean a lot to me. 

Here we are midweek once again.  The days fly by when you’re having fun.  Tomorrow is Valentines Day, so today I’ll be making up something good to celebrate.  

Impossible Cherry Pie with Streusel Topping.

Preheat ove to 400 degrees.

For the pie:

1 c. milk

2 tbsp butter

1/2 tsp almond extract

2 eggs

1/2 c. Bisquick

1/2 c. Sugar

1 can cherry pie fililling

Streusel Topping

2 tbsp. butter

1/2 c. Bisquick

2/3 c. brown sugar

1/2 tsp. cinnamon

Beat all ingredients except pie fill ing and pour into a greased pie plate.  Carefully spoon on sherry pie filling.  Bake for 25 minutes. Remove from oven and spread Streusel evenly over pie.  Return to oven and bake 10 additional minutes.

I love cherry pie and this is a simple way to fix one.   I’m all about quick and easy these days.  No fuss or the mess of making pie crust.
