ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Lincoln’s Birthday, which honors the 16th President of the United States. It’s the anniversary of his birth on February 12th, 1809. He served as President from March 1861 until his assassination in April 1865. Lincoln successfully led the Unites State through the greatest constitutional, military and moral crisis, the American Civil War.
Abraham Lincoln was also known as Honest Abe and The Great Emancipator, two titles he fully lived up to during his political career. He maintained the Union during the Civil War and emancipated many slaves.
We celebrate his many accomplishments today.

THOUGHT FOR TODAY
You can have anything you want — if you want it badly enough. You can be anything you want to be, do anything you set out to accomplish if you hold to that desire with a singleness of purpose
Abraham Lincoln
I’ve always looked up to Abraham Lincoln. He and John F. Kennedy have to be two of my favorite Presidents. Lincoln came from such humble beginnings, he gave hope to all that it’s not what you have in material things that counts. Anyone can be great. Money cannot buy greatness.
Today is Tuesday and once again, it’s my day to make lists and set my goals for the rest of the week. It’s the only way I keep on track here. I may not get it all done, but I do keep on keeping on. Slow but sure it will get done.
It’s also time to cook up something new. All my weekend leftovers are gone. This easy dinner is one of my go to week night meals. It’s made with a chewy pasta and gooey cheese balanced out with a helping of veggies and meat. Some call it goulash or Hamburger helper.
Southwest Skillet Ragu
Serves 4 to 6
1 c. elbow macaroni
1 lb. ground beef or turkey
1 onion, diced
1 med. sweet bell pepper, chopped
8 oz, mushrooms, quartered
2 cloves garlic, minced
1 tbsp. chili powder
1 tsp. cumin
1 tsp paprika
1/4 tsp cayenne or red pepper flakes, optional
28 oz. can diced tomatoes
1 c. shedded cheddar cheese, plus more to serve
Salt and pepper
In a pot of boiling salted water, cook the pasta until still a little chewy. Scoop out and save 1 cup of the liquid, then drain the pasta.
While pasta is cooking, heat a tsp of olive oil in a skillet deep enough to hold everything. Add the meat, and cook about 8 minutes. Then cook the onions until they are beginning to brown and add the mushrooms until they turn brown. Add the peppers and cool until softened. Stir in the spices and good until garlic is fragrant.
Pour tomatoes with juice into pan and bring to a rapid simmer about 5 minutes. Stir in cheese and the pasta and stir until cheese is melted. Add some of the reserved cooking water if you like a thiner ragu. Spoon into individual bowls and top with an extra scattering of cheese and serve.
I’m going to try and make all in one pot and cook the pasta right in the same pot. I’ll probably have to add more liquid.
We’ll see…
I hope you all have a TERRIFIC Tuesday!

Enter into His courts with thanksgiving — and in His presence is fullness of Joy!
Please pray for God's protection of
our troops and HIS wisdom for their

Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!

It's raining here this morning, melting some of the snow but tonight it will be colder and we're to get more....Gotta make my own sunshine today!
I make that same recipe and I call it Goulash, too. My mother made this when I was a child but she called it ‘slumgullion’ which means “cheaper insubstantial stew.” I disagree with that definition! It makes a good filling meal!
Louis Dean makes what he calls Goulash but it’s more like stew. I love a good skillet dish!
I’m in school today! Working the Book Fair. It’s only 10:15 and I’ve been up since 5:40. Talk about a change in schedule! I can do this - for a day anyway!
Abraham Lincoln indeed was a great president. To be president during that time of the Civil War had to be such a hard job. Tragic how his life ended though. Good thing for us to honor him and all of our presidents for their faithful work in trying to guide our country.
betty
What was true in Abe's day and age is still spot-on!
The thought of your chewy and gooey supper is making my mouth water!
