Today is also National Chili Day
Whether you prefer it Texas style, Mexican style, or vegetarian, chili served with a side of cornbread is a fabulous comfort food . Despite popular belief chili doesn’t not come from Mexico. The recipe has been influenced by Mexican culture but it also incorporates elements from Native American and Spanish traditions. Many believe it originated in Texas where all three of these cultures intersected.
To celebrate National Chili Day, indulge in a bowl of this historical spicy stew.
February 28th is also National Chocolate Soufflé Day and National Tooth Fairy Day

Although I won’t be seeing this grandson today I will be going to his party on Sunday. Today’s pictures are from last weekend’s Pinewood Derby that was held by the Cub Scout Pack he belongs to. I’ll be sharing birthday pictures come Monday. Meanwhile I’m wishing our Lucky Guy a very happy Birthday today!
I’ve shared my chili recipe several times so today I’m sharing a recipe for the perfect chili dog. It’s one of my favorite things to do with leftover chili.
The Ultimate Chili Dog
8 large hot dogs
8 hot dog buns
Leftover chili or a good quality canned chili, your choice
1 onion chopped
1 1/2 c. cheddar cheese, shredded
Heat the chili. Preheat grill and place hot dogs onto grill and cook for 8 to 10 minutes. Turing occasionally. Remove from heat and place into warmed hot dog buns, top with chili, chopped onions and cheese.
Served with crunchy vegetable sticks and some chips they make for a delicious meal.
The week seems to be flying by here at my house. Isn’t that the way of it when you are having fun. Hard to believe it’s the last day of February already.

Having a large family means that there are always a lot of special occasions to celebrate.
I love hot dogs and can you believe I have never eaten a chili dog lol. I love them just plain but with lettuce.
Happy birthday to Lucky Guy! I enjoyed the pictures; it reminded me of when my kids were part of pine car derbies. So much fun! I know you'll enjoy his party this weekend. I do like chili as long as it is not too hot and over fries or a hot dog makes it very good!

Hot dogs = chili dogs to Louis Dean and he eats them exactly as you described except he adds mustard and pickle relish to them.
I think it’s interesting how we all eat things a bit differently. Changes in the Wind eats hers plain with lettuce! I’ll have to try one that way!
Celebrating and watching grands grow up is such a wonderful blessing. Every time I see mine - they have changed a little. Pretty soon all 8 of my grandchildren will be taller than I with the exception of Trystan. I think she will not get past 5 feet!
The days do fly by and I have more to do than I’ll be able to finish - but I’m going to give it a try!
How Tom and I love our chili … so versatile and yummy! Hormel 'no beans' chili is a staple in the cupboards. Tom likes his straight-up, but I enjoy mixing mine with soft-scrambled eggs with a heaping pile of melted cheddar atop. (That's the way I used to eat it back in Texas … after the clubs closed, everyone went to a nearby 'greasy spoon' café for chili and eggs and Texas toast.)
