Today is National Tortilla Chip Day which is a snack food made from tortillas which are cut into wedges and then fried. Tortilla chips are often a complimentary appetizer in Tex Mex and Mexican restaurants . Although first produced in Lost Angeles in the late 1940’s they are always considered a Mexican food, known as tostados. Though usually made of yellow corn, they can also be made of white, blue or red corn.
To celebrate National Tortilla Chip Day, buy a bag of your favorite tortilla chips and enjoy them with your favorite dip.

Tortilla Chips are a great snack and depending on how you serve them can make a wonderful meal too. The recipe below is for Nachos made with crisp tortilla chips layered with ground beef, cheese, tomatoes, olives and onion, that when baked makes for a great lunch or dinner for me.
Festive Taco Nachos
1 1/2 lb. ground beef
1 jar Picante Sauce
2 c. shredded Mexican blend or Cheddar Jack cheese
1 tomato chopped
1 pkg., about 11 ounces, tortilla chips
2 tbsp. sliced black olives, optional
2 tbsp. sliced green onion
Set oven to 350 degrees. Cook the beef until well browned. Pour off any fat. Stir in picante sauce and heat to a boil. Reduce the heat and simmer 5 minutes.
Arrange tortilla chips on a rimmed baking sheet. Top with beef mixture and cheese.Bake for 5 minutes until cheese is melted. Top with tomato, olives and green onion. This will serve 8 people.
I have to cut down the amount used just for me. I also like to add some beans to mine too.
I cooked for the weekend yesterday, making a pot roast in the crock pot so I thought I’d share that recipe too It’s shown in the picture above. I got a great deal at the grocery store and bought, not only one, but two roasts. One I fixed for the weekend the other I had cubed into stew meat. After all they were only 3.99 per pound and I’d not seen them that cheap in a long time.
The meat was tender and moist. And everything cooked cooked together was delicious.
Crockpot Beef Pot Roast
2 lb. pot roast
2 c. baby carrots
2 lbs. new potatoes cut into chunks
2 cans cream of mushroom soup
1 packet of onion soup
1 1/2 c. water
Place beef pot roast in crock pot. Add carrots and potatoes. Combine the mushroom soup onion soup mix and water. Pour over the roast and the vegetables. Cook on low about 8 hours.
As usual I’m off to church this morning and will pick up my Sunday newspaper on the way home. Don’t forget a Sunday well spent makes for a week of content!

I like that recipe! I'm a big fan of tortilla chips. The best ones we found, which was surprising, were the ones from Wal-Mart. Their brand. Less than a dollar for a 13 ounce bag. They were so tasty!

Roasts and tortilla chips … two of my favorite things! Tom and I used to make a big old plate of nachos each Friday night and watch a movie. Not sure why we stopped doing that; it might have something to do with two greedy little dogs that arrived in our life 5 years ago. Not naming names (lol), but someone needs to learn to say 'no'! Happy Sunday!
