Today is National Banana Bread Day, which is classified as a quick bread or tea cake. Bananas arrived in the U.S. in the 1870’s and quickly became one of the most popular fruits on the market. It wasn’t long before they started to appear in dessert recipes as the star ingredient.
The cookbooks that first mentioned banana bread were published during the Great Depression. Historians believe that a resourceful housewife who did not want to throw away over ripe bananas may have invented the original recipe.
Today there are many variations on this classic. To celebrate, bake yourself a delicious loaf with add ons like chocolate chips, berries our nuts!

I make banana bread often as there are always have bananas on hand here at my house. Years ago I discovered that they were the best way to prevent the leg cramps I was having. It’s good for breakfast, lunch or dinner. You can make sandwiches with it and it’s good for dessert too.
So today I’m sharing the banana bread recipe I use. I’ve probably given it before, but here it is again.
Chocolate Chip Banana Bread
1/4 c. vegetable oil
1/1/2 c. flour
1 tsp. baking soda
1 c. sugar
1 tsp salt
2 eggs, beaten
3 bananas, mashed
1 c. chocolate chips
Preheat oven to 350 degrees. Grease and flour one loaf pan.
In large bowl whisk together flour sugar, baking soda and salt. Mix in bananas and eggs. Stir in Chocolate Chips and pour in prepared pan. Bake until tooth pick in the center comes out clean, about 60 minutes.
Cool in pan 10 minutes, then turn out onto a plate and cool completely right side up.
Today I’m taking advantage of warmer weather here and getting the Spring and Easter decorations out of the storage unit. It’s time to put away Valentines day and move on to Spring, St. Patrick’s Day and Easter. Everything needs a good dusting anyway so I’ll be doing that too. It’s so nice to have a few more minutes day light every day even when the sun isn’t shining.
As you can see by my pictures today, the tree in front of my house was cut down yesterday, and I will miss it. I love the shade it provided to the front of the house on hot summer days. Now it’s gone. They cut one of my neighbors trees down too. We can only wait to see if they cut any more. Their equipment was left standing by the tree on the carport side of my house overnight. Look like it will be next. One of the favorite things about living here has been the beautiful trees surrounding my home. Hopefully they will plant some new ones to replace the ones cut down.

On the bright side I will now have less leaves to rake...
Oh no that the tree was cut down! I'm sure there was a reason, but I know you are going to miss it! At least you won't have the leaves from it to mulch in the fall!
I like your banana bread recipe. It is true that bananas are a big help for leg cramps.

Heretofore, I've only made banana nut bread during the holidays. Like my mother, I usually fashion tiny sandwiches w/ a cream cheese filling. I never considered using chocolate chips, but that sounds really good, too!
I love that prayer! We need to get our big elm topped off this spring......I will miss the shade. But it's dead anyway so there hasn't been much shade for the last year anyway.....
