Today is Do a Grouch a Favor Day which gives us the opportunity to do a kindness for a grouchy person to make their day much better. Something as simple as a cheerful greeting and a smile can make someone’s day. Be cheerful and remember that happiness is contagious and your cheer may just rub off.
Be nice to them and who knows what effect your goodness may have.

Being kind to someone is never a waste of time. All of us could use a smile, a pat on the back or a hug now and then. Cheering someone up when they are down is not always easy but a smile is a good way to begin. Sometimes all people need is to know that others care.
So here is a ***BIG SMILE*** for all of you today, just in case you need one.
One thing I know for sure is that every day may not be a good one, but there is always something good to be found in every day when we take the time to look for it. Counting my blessings every day is a sure way to cheer myself up. You can not be sad or grouchy when you see how many good things in life that there are to be thankful for.
Yesterday I cooked for the weekend and made an old fashioned dish that my mom used to fix. It’s called
City Chicken. There is no chicken involved at all. For true city chicken you should use pork and veal but this time I’m made it with just pork as I happen to have some on hand. A while back I’d bought a large pork loin on sale and had the butcher cut it up in thirds. Two thirds were 2 smaller roasts and and the last third was cut into cubes. The butcher even supplied the skewers.
City Chicken
1 1/2 lb. pork cut into cubes
salt and pepper
2 eggs beaten
1 c. seasoned bread crumbs.
1/2 tsp. paprika
1/2 cup olive or vegetable oil.
1/2 c. water
Place meat cubes on skewers. Beat eggs in a bowl.Then a separate bowl mix bread crumbs with salt, pepper and paprika. Dip meat in egg mixture and roll in bread crumbs . Repeat dip and roll if desired. Slawly brown on all sides in a hot oil. Add 1/2 cup water and cover pan. Simmer until tender, about 1 to 1 1/2 hours. Add flour to drippings for gravy. It is good served over rice or mashed potatoes.
I also made a pot of taco soup from a recipe a friend shared. It’s delicious. All of it will be good comfort food for a very cold weekend.
Today DD and I are off to do our annual President’s Day sale shopping at the outlet Mall. Hopefully we’ll find some bargains to make the trip worthwhile. It’s cold out and they say we can expect dreary weather, but we’l! be making our own sunshine!

I always told my students "You will regret being mean, You will never regret being nice."
How curious about that pork dish being called City Chicken! This Winter Tom and I've sure gone through more than our share of Smithfield pork loins - so yummy in the slow cooker! He loves tacos, so I might do that next week before our weather turns too warm. I hope you and your daughter had a blast today!
That is an interesting recipe for the City Chicken, especially since it doesn't contain chicken. I think I'll have to try it soon. I hope you found some bargains on your shopping expedition.
