Today is Homemade Soup Day which is the day to enjoy a piping hot bowl of this perfect comfort food. Canned will do the trick, but there’s nothing like a bowl of fresh homemade soup. Whether your favorite is chicken noodle, tomato, or minestrone, you can enjoy your favorite.
The history of soup is likely as old as the history of cooking itself. It’s a simple concept combining various nutrition ingredients into a large pot to create a filling and easy to serve food that has been used for centuries. There are many regional varieties that have evolved according to local ingredients and tastes, Italian minestrone, French onion, New England chowder, and Russian borscht are all perfect examples.
Americans consume over 10 billion bowls of soup a year. Nearly all households have soup in them, proving its immense popularity. So have some soup today and celebrate the day!

I had a great weekend and I hope you did too. On Saturday I joined DS# 5 and his family to watch Mr. Wonderful’s basketball game. Their picture is shown above. Sunday was warmer and it was great to get out and go to church without freezing.
I made a pot of chili for the weekend, so I’m thinking I may make some potato soup today. This time of year it seems I cannot think of anything better to have than soup. It’s a quick and easy lunch or dinner for me.
Potato Soup
8 medium potatoes
4 c. milk
1/2 tsp salt
1 tsp pepper
5 tbsp. butter
1 c. onion, chopped
Peel potatoes, rinse and chop. Cook until tender, add salt and pepper, then mash potatoes a little, not a lot, so there are bigger pieces remaining. In a small pan, melt butter and sauce onions till tender, add the milk until heated, then add to potato mixture and heat till boiling.
I also like to add chopped celery and carrots to mine but it is good without them.
Since last week my focus was on keeping warm here, today I’m picking up where I left off sorting out the spare room and the craft nook. I hope to get it done so I can move on to something more exciting.

Soup is a true comfort food!
I love soup. Always so tasty! That potato soup looks delicious too! We had something unique yesterday at a fast food place we went for lunch. The restaurant is called Slapfish and serves mainly fish items. They had chowder fries which were regular french fries with clam chowder on top of them. Boy were they scrumptious!
