Today is Boy Scout Day which according to the Scout’s motto, is a day everyone should try to do a good turn. The date goes back to the founding of the Scouts in America by William Dickson Boyce in 1910. In Great Britain Lord Baden-Powell is called the father of the Boy Scouts. There are now Scout organizations all over the world.
Scouts learn a lot about nature, sports, animals and have the claim to always be helpful and friendly.

I think Scouting is a great organization. My sons were Scouts and several of my grandsons too. The pictures today are of DS#6 and his son who are the only ones in Scouting right now. They were taken this past summer at their Boy Scout Camp.
I had a great time with our little X Factor yesterday at the grandparents breakfast at his school and will share a few pictures of that tomorrow.
It’s Friday, and I’m hoping to end this work week on a positive note by being thankful for what I was able to get done, and not think about what I didn’t get done. Here’s a big thumbs up to your week! Take a deep breath and try to think positive.
Friday night supper is going to be a Baby Spinach, Mushroom and Cheddar Cheese Frittata. It’s a great way to use up any leftovers you might have on hand from the past week's dinners. You can substitute what ever vegetables or cheese you might have in the fridge.
Friday Night Frittata
1 onion, sliced
1/2 lb. mushrooms, quartered
8 large eggs, whisked
2 Tbsp. milk
4 oz. cheese, shredded
4 oz. baby spinach
Chop onions and mushrooms. Whisk eggs and milk with some salt and pepper. Stir in cheese.
Preheat oven to 400 degrees. Heat up skillet over medium heat. Add cooking oil and then sauté onions about 5 minutes. Next add mushrooms, and cook for another 5 minutes. Add the spinach leaves and let the heat wilt them. Pour in egg and cheese mixture. Stir to mix everything together and put in oven. Bake for about 20 minutes until knife comes out cleanly.
I use my iron skillet to make this as it’s the only one I have that is oven proof.

My son in law is an Eagle Scout as are his brothers and their dad. I’m assuming Harrison will be one too.
I have two cast iron skillets. One bigger than the other and so heavy I have to use both hands to pick it up!

Happy Friday! I’m here in Quadville and happy to see my grands. They woke me up before they left for school. I’ll be here when they get home! My, goodness! Kids grow up so fast, don’t they??
I do think scouting is a great organization. I am a little disappointed that the Boy Scouts changed their name, but I guess it goes with the times. Your dinner tonight sounds delicious!

My own days in Brownies and Girl Scouts were some of the best times of my life! Nice to see that your son and grandson are carrying on the tradition.
