Today is Special Education Day which marks the anniversary of our nation’s first federal special education law which was signed by President Gerald Ford on December 2nd, 1975. This law is the Individuals with Disabilities Education Act. It made education available to all American children and this day honors the progress that has been made in education.

While I think that each and every one of us is SPECIAL, not all of us are disabled. It’s hard to believe that there actually was a time when not all people with disabilities were able to have an education. It’s estimated that 15% of children in the U.S. have a disability and every child deserves a chance.
We certainly have had some mild weather lately but the long range forecast is predicting much colder weather with high temps in the 30’s in the week ahead. Winter may not officially come for a few weeks yet, but some winter weather is coming our way.
The trees are almost bare now with very few leaves remaining so I’m thinking that today may be the last time I’ll be mulching leaves for this year anyway. It’ll soon be time to keep cozy indoors.

It’s National Fritters Day
Fritters are delicious fried cake filled with fruit or mean. They can be served as a snack, side dish, or even the main course. There is actually not much difference between pancake and fritter batter. They are both made with the same ingredients. It’s only once the fruit or meat is dipped into the raw batter and then friend that it becomes a fritter.
When I think about fritters, my mind goes back to the days of my childhood and the delicious fritters one of my friend’s mom made. The were corn fritters that she served for breakfast for her family and absolutely delicious. They were the first fritters that I ever had and unforgettable. These days I often have apple fritters. They are a favorite of mine and I shared the recipe for them a while back.
Today I’m going to share a recipe for those corn fritters.
Corn Fritters
1 egg
1/4 c milk
1 c. Bisquick baking mix
1 can whole kernel corn, drained
black pepper
Blend together egg, milk, and Bisquick. Stir in corn. Add pepper to taste. In a wok or frying pan, heat 2 inches of vegetable oil. Using 2 teaspoons, gently drop a mound round of fritter batter into hot oil. Fry 6 to 8 fritters at a time, turning until golden brown. Drain on paper towels. Serve with maple syrup.

Glad that there are programs out there to help anyone who has a disability to be able to learn to the best they can. I bet you are glad to be done with the leaf mulching for this year.

I'm loving that cheery snowman in (your) image #3!
I wish more businesses would look at employing those with special needs. For a while, our local supermarket had a fellow with Downs bagging groceries. His big smile and cheery attitude could turn the saddest frown upside down. I often wonder what happened to him. Sadly, I'm afraid Big Corporations are only looking after their potential liability.
