Today is International Mountain Day which was designated by the United Nations General Assembly in 2003, as they encouraged the international community to organize events at all levels on that day to highlight the importance of sustainable mountain development.
Mountain forests play a role within a Green Economy as well as in climate change. Mountains are a source of recreation and resource with snow covered sides providing ski slopes to enthusiasts and minerals in abundance to those brave enough to delve into their stony sides
In certain areas of the world they are also a source of unique agriculture providing coffee, cocoa, herbs and spices. They are also home to many flora and fauna that depend on them.

This time of year I feel like I’m climbing to a mountain top. After a busy weekend here I’m about to start a very busy week. This is the final week before our family Christmas and everything must be ready for our celebration on Saturday. DS#6 is to be the host for this family gathering so a lot of what needs to be done will be done by him, but I have lots to take along to the party.
I could only hope that the whole family would be there but there are those that can’t come due to time and distance so we’ll just have to make the best of of it with who and what we’ve got.
My lists have been made and I’ve been checking things off as they are completed. I’ve yet to get packages or cards out in the mail, so they’ll be running late this year. The prime time to get them out has passed and they’ll probably arrive late. We’ll see…
We had some snow late Saturday night and into Sunday morning, but not a lot, however tonight and Tuesday they say we’ll get more. It’s been very cold too with temps mostly below the freezing mark. Brrr Chill! I don’t really want to go out at all but will have to. Keep warm everyone ! Colds and flu are making the rounds.
Thanks to DS#3 and #4 I have some new pictures to share today. They decorated their homes for Christmas and both really did a great job!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Noodle Ring Day which is a treat that makes sure every knows that pasta does have to look boring.
If you have a ring mold, or a bundt pan then you can make this stylish pasta meal. It works best with long, flat egg noodles .
Noodle Ring
8 oz. pkg. egg noodles
3/4 c. cream
3 eggs, slightly beaten
fine dry breadcrumbs
Cook noodles in 3 qt. salted water about 10 minutes. Drain, add cream and eggs. Butter a ring mold and dust with crumbs. Pour noodle mixture into mold and set in pan of hot water.
Bake at 350 degrees for 45 minutes. Unmold on hot platter and fill center with creamed pas or creamed tuna.
Makes 6 servings.
