Today is Christmas Day, the biggest holiday of the year. Christmas has both a strong religious and traditional meaning. It has a certain feel, all to itself, that you usually do not feel at any other time of the year. It creates within us, a sense of kindness and concern for fellow man. At no other time are we more generous and giving. It creates a sense of family and belonging.
Everyone comes home for the Christmas holiday. It is a time of family and giving. It is truely a time that comes but once a year. Christmas is celebrated in most countries around the world!
Join in the celebration of the magic and wonder and the spirit of this holiday!

It’s a quiet Christmas morning here at my house. I have plans later in the day to spend some time with my sister and BIL. It’s very cold but the weatherman says we won’t see much more snow so the roads will be safe to travel. All my children and their families spend time at home Christmas morning and some will be visiting with the other half of their family. That is why we do our family gathering on a different day.
Today’s pictures are from last Christmas Eve, I’ll be sharing the ones from this Christmas soon. It was a blessing to be with at least some of them at Christmas Eve services. As always they are all in my thoughts and prayers no matter how far away they may be.
I took a cue from one of my friends and got some ham and cheese for mini slider sandwiches and made some soup to have with them. So I’m keeping it pretty simple here.
The house is warm and cozy and after a visit with my sister I’ll spend the evening snuggled up with some hot cider and a few Christmas cookies.
Life is good in the slow lane.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Pumpkin Pie Day! Pumpkin Pie is a classic dessert for Thanksgiving and the
holiday season. This delicious pie consists of a sweet, pumpkin filling baked into a flaky pie shell. The pie is often flavored with warm spices, such as nutmeg, cinnamon, and ginger.
Did you know: There are at least two Christmas songs that sing of the tradition of eating pumpkin pie for the holidays. Those songs are Home for the Holidays and Rockin' Around the Christmas Tree.
This pie recipe is a great way to use up leftover eggnog and serve a holiday dessert with a festive twist.
Eggnog Pumpkin Pie
for the crust:
8 tbsp. buter, melted and cooled slightly
1 tbsp. vegetable oil
1 tbsp. sugar
1/4 tsp. salt
1 1/3 c. flour, plus more as needed
Stir the butter, oil sugar, and salt together until evenly combined. Add the measure flour and still till soft dough forms
Sprinkle the dough in small clumps over the bottom of a 9 1/2 inch deep dish pie plate . Press the dough into the bottom and up the sides of the plate. Cover with plastic wrap and chill for at least 30 minutes. Meanwhile prepare the filling.
for the filling:
15 oz. can pumpkin puree
1 1/4 c. eggnog
2/3 c. sugar
3 large eggs
1 tsp. cinnamon
1/2 tsp. salt
1/8 tsp. cloves
Heat the oven to 350 degrees. Place a baking sheet on the rack while oven is heating.
Place all ingredients in a large bowl and whisk until smooth and combined. Pour into chilled pie crust.
Place the pie on the hot baking sheet and bake until top starts to brown and filling is set. About 50 minutes to 1 hour. Remove from the oven to a wire rack and let cool completely.
for the topping:
1 1/2 c. heavy cream
2 tbsp. sugar
grated nutmeg
When ready to serve, chill your mixer bowl in freezer about 20 minutes. Place the cream and sugar in the bowl and beat on high speed until medium peaks form, about 2 minutes. Spread the whipped cream evenly over the pie and grate a dusting of nutmeg over top.
