Today is also Simplicity Day which was born out of a need to be free from the complications of the world and to allow ourselves to just be simple. Celebrate life through simplicity by turning off your devices, getting rid of complicated things and just let life be about living for a day.
Henry David Thoreau was born on July 12, 1817. As an author, naturalist, philosopher, historian, and more, Thoreau advocated a life of simplicity. He asserted that, as you simplify your life, the laws of the universe will be simpler.
Take time to relax and consider what you could remove from your life that will make you a little happier each day. Slowing down, enjoying life’s simpler moments, decluttering our homes and offices, turning toward nature are all actions can make us less stressed and more happy. Simplicity Day can lead the way.

Today is a long distance anniversary celebration in my family only because they left for vacation and will be celebrating the day far away from here. I hope they enjoy vacation and have a Happy Anniversary. Praying for a safe and carefree trip !
These summer days are slowing down here a bit for me as it’s heating up and I’m doing less and less. I’m enjoying the simple life. Lots of rain here and once again I woke up to thunder this morning.
I have a smaller house and a smaller yard. I’ve decluttered and downsized. It makes for a much simpler life with less to clean and to care for. At this point in my life, it’s the way to live. Having less is meaning more for me. More time to enjoy what I like to do.

Today is National Pecan Pie Day!
If you like nuts and you like pie, and you like sweets, then today is your day.
Decadent Pecan Pie Recipe
Pastry
1 cup flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2to 3 tablespoons cold water
Filling
2/3 cup sugar
1/3 cup butter or margarine, melted
1 cup corn syrup
1/2 teaspoon salt
3 eggs
1 cup pecan halves or broken pecans
In medium bowl, mix flour and salt. Cut in shortening, using pastry blender until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl
Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
Heat oven to 375 degrees. With floured rolling pin, roll pastry into round 2 inches larger than upside-down 9 inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; press with times of fork or flute if desired.
In another medium bowl, beat all filling ingredients except pecans with wire whisk or hand beater until well blended. Stir in pecans. Pour into pastry lined pie plate.
Cover edge of pastry with 2 to 3 inch wide strip of foil to prevent excessive browning. Bake 40 to 50 minutes or until center is set, removing foil for last 15 minutes of baking. Refrigerate at least 2 hours until chilled before serving. Store in refrigerator.
COUNTING MY GIFTS

Happy Anniversary to your daughter and son-in-law! Hope they have a great day and a fantastic vacation! Hubby and me drive by big houses and we admire them, but I think of two things, how expensive their utility bills have to be in summer with air conditioning and how much time it would take to clean them. I like simplicity too these days.

Pecan pie used to be my favorite of all desserts. Unfortunately, I lost my mother's recipe and haven't been able to find it anywhere on line. Hers called for both light and dark Karo syrup and shredded coconut, too; but I'm far too poor a baker to try and replicate it from memory. Nuts are getting certainly expensive!
