Today is International Kissing Day which celebrates the most enjoyable of activities and the part it plays in cultures throughout the world.. It’s an expression and experience of intimacy. A kiss may be used to express sentiments of love, passion, affection, respect, greeting, friendship and good luck.

For me kisses and hugs seem to go together. They are definitely an expression of affection and I love getting and giving them to my family.
It’s hard to believe that it is Thursday already. With the holiday weekend extending into Tuesday, yesterday seemed like a Monday to me. Today I’ve errands to run like getting gas in the car and I’m out of bananas so a trip to the store is in order. It’s looking like a beautiful summer day is coming our way.

There is a food holiday to celebrate every day of the year!
It’s National Fried Chicken Day !
Fried Chicken is one of America’s favorite meals also one of mine. I have to admit to buying a bucket of chicken from KFC when I went shopping on Monday. I didn’t manage to eat all of it, but put some in the freezer for a meal later on.
That is not to say that I haven’t made it myself. My favorite way is to make oven fried chicken. Feeding a large family meant that a lot of chicken was required and this was the easiest way for me to fix it. I recently found a new recipe to try and thought I’d share with you all today
Buttermilk Ranch Oven Fried Chicken
3 or 4 lbs cut up fryer chicken
1 envelope ranch salad dressing mix
2 cups buttermilk
1 box corn muffin mix
1 tsp salt
1 tsp pepper
1 tsp paprika
1/4 tsp cayenne
Combine chicken, ranch season mix and buttermilk in a large ziplock bag. Turn the bag over several times to ensure chicken is coated and place in refrigerate all day or at least one hour.
Preheat oven to 425 degres. Spray a large baking sheet with cooking spray and set aside. Combine corn muffin mix and seasonings in a shallow bowl.
Remove the chicken pieces one at a time and shake off excess buttermilk. Dip the chicken in the breading mix and turn to coat evenly. Place chicken bone side down on the prepared baking sheet.
Repeat for remaining chicken pieces.
Lightly spray the top of each pice of chicken with cooking spray. Bake for 30 to 40 minutes until chicken is cooked through and juices run clear. If it browns too fast, just place a piece of foil lightly over the top.

Nice place to watch the sun set! It is a confusing week for sure after the holiday. For some reason I kept thinking yesterday was Thursday.

YAY for national Fried Chicken day. I had Salisbury steak. But I love fried chicken. It just doesn't happen here very often. Nothing fried does really. And not that I really watch the fried food that much. I just don't like the mess. Beautiful pictures!!
Yeay! One of the permanent "to-do's" on my Retirement List was learning to make fried chicken. I think you may have solved a lot of undue stress here! :)
