Today is Fool’s Paradise Day which is a day off for the mind. When real life is messed up and every thing might go wrong, the message is to close your eyes and dream yourself into another world. Paradise is an imagined place where there is no pain, work, sorrow, annoyance or worries exist. On Fool’s Paradis day is it a good opportunity to visit this perfect place and forget about the troubles in real life. It’s called Fool’s Paradise Day because escaping from reality needs a little foolishness. Let the world fall apart and create you own paradise when ever you need a break.

My fool’s paradise is an imaginary trip to the beach. Whenever things get bad, I close my eyes and take an imaginary trip to beach. It’s my favorite place to be. The beach is a peaceful happy place where the cares of world drift out in the waves along the shore.
We all need a place where we can rest and get away and that is not always possible, but with a little imagination a trip to the beach is possible anytime and doesn’t cost a thing. If you happen to see me smiling when everything seems to be going wrong, you will know I’m on my imaginary trip to the beach.
Another hot and rainy day here today but tomorrow is suppose to be better. Due to the weather, the yard work hasn’t been finished yet, so it’s looking like Friday might finally be the day! We’ll see...
I know I’ve over used these beach pictures, but I don’t have any new ones to show you and they are from the last time I actually had a trip to the beach.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is French Fries Day which is a day to celebrate this classic fast food treat. Due to the fact that I used to have a crowd to cook for with my large family I found that oven fried fries were best. They are also a little bit healthier than deep fried ons.
So here is a simple recipe for oven fried fries. It serves one or two but you can increase ingredients for how ever many you are feeding.
Baked French Fries
1 large baking potato
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon onion powder
Preheat oven to 450 degrees. Cut potatoes into wedges. Mix olive oil, paprika, garlic powder, chili powder and onion powder together. Coat potatoes with oil and spice mixture and place on a baking sheet. Bake for 45 minutes and serve.

Its good to see beach pictures, Ma! Now that I live away from the beach, I do like to see pictures of it to remind me of where we used to live. That baked french fry recipe looks good. Hubby makes something similar. We also put some potatoes on the grill wrapped in foil with seasoning, Delicious!

Actually, this reminded me of a mental exercise I'd quite forgotten.
Back in the early 70's I attended a free seminar and ultimately signed up for a 3-day "Sylvan Mind Control" program.
About my only take-away, was visualizing my personal 'happy place, safe place':
A wooded glen, quite pleasant as I recall. Perhaps I should revisit it more often.
