Today is Mandela Day which recalls the life of Nelson Mandela and reminds us of the necessity for strong men and women to stand up against injustice. The heart of Mandela Day is service to others and the creation of a better world for everyone.
Mandela won the 1993 Nobel Peace Prize and ascended to his country's presidency in 1994, directing the nation toward a multi racial government and majority rule.
It takes every small effort of everyone working together to create a world that is fair and just for every one. We can all make a difference.

We can all be a bright spot in the lives of others when we take the time to care. By using encouraging words that up lift up others and thinking before we speak because our words can make or break someones day.
We can offer small acts of kindness like a pat on the back or a smile. They are simple little things that make a big difference. We all go through periods when our light flickers a bit and sometimes just a little effort makes all the difference in the world.
Each of us has something special to offer. Let your light shine through. Be kind, Be gentle and shine wherever you are. Your light might be only thing that lights the path for others. Try to make your corner of the world a little brighter.
Yesterday was one of those perfect summer days here. I opened up the windows and turned the a/c off and just let the fresh air in. We don’t get many of these days but thankfully they do happen. Today it will be a little warmer but not uncomfortably hot which is a great thing as it’s time to mow the yard again. I’m not complaining because it gives me a reason to be outdoors and get some exercise.
I’ll be making hay will the sunshines it seems. The rest of the week will be even hotter so today is a good day to get it done. On the bright side my a/c in the car has been fixed now so when it’s hot out I can still drive in comfort!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Something fishy is going on today. It's National Caviar Day.
Caviar is salted fish eggs and is considered a delicacy. The most prestigious and best caviar comes from sturgeon found in the Caspian Sea, But other fish including whitefish and salmon are less expensive alternatives.
This is one thing I’ve never had and will give a pass today but I do love seafood so that will be on the menu. Salmon loaf might fit the bill here.
Salmon Loaf
1 cup flaked salmon, fresh or canned
1 cup soft bread crumbs
1 cup scalded milk
2 eggs separated and beaten separately
1 tablespoon melted butter
1 teaspoon lemon juice
2 tablespoons minced onion
2 tablespoon finely minced green pepper
Soak bread crumbs in scalded milk. Combine the beaten egg yolks with salt, butter, lemon juice, onion, pepper and salmon. Add bread crumb mixture to egg mixture
Beat the egg whites till stiff and then fold in to the salmon and egg yolk mixture. Pour into buttered loaf pan and bake 350 degrees for 45 minutes.

I didn't think I liked caviar until it was served at some fancy dinner party years ago. Must be the sodium, but I thought it was delicious. (Not that I can afford it nowadays!)
We love salmon loaf here. It is a firm favourite. I like to serve it with boiled baby potatoes and creamed peas., yum! I have never tasted caviar and am not sure I would like it, but for many it is a favourite treat and a great delicacy! There is nothing like opening up the windows and letting in a bit of fresh! Xoxo
