Today is Pandemonium Day which an annual celebration of chaos and disorder. Pandemonium Day is a reminder of the chaos and uncertainty that marks most of our lives.
Everyone has a day like this once in while. Its a day when all sort of unexpected things occur. Its a time when everything is happening at the same time, and at a very fast pace.
Today's holiday encourages people to take a different look at upheavals and changes in their lives. It also inspires ways to take a pause from the daily grunt and to bring order and equilibrium in their lives.. If Pandemonium prevails, just go with the flow in a calm, cool manner. Sanity will return soon enough.

THOUGHT FOR TODAY
I have had some very chaotic days in the past and they seemed like they would last forever, but I learned that they too will pass. Nothing lasts forever. Right now things are pretty calm here but that won’t last forever either. One thing about life is that it is always changing. If you are having a good day be very thankful for it.
As hard as it sometimes seems we need to take the good and the bad and make the best of what ever comes our way each day. Every day may not be a good one, but there is something good in every day if we look for it.
They say that mid the chaos, uncertainty, and need for positive change comes the insight, the salve really, that every problem has a solution and every problem creates an opportunity for growth.
I tried to do one of those pano pictures of the sunroom, but it didn’t work. I got all these individual pictures instead so that’s what I’m sharing today.
Life is good !

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Mac and Cheese Day.
Made with macaroni noodles, cream or milk, and the golden goodness of cheese, mac and cheese shines as a side dish but can stand on its own as a main dish as well. While I love homemade macaroni and cheese, my children and now many of my grandchildren love the kind that comes in a box ready to make, Kraft mac and cheese.
Here is an easy recipe to try out if you like the homemade variety
One Pot Macaroni and Cheese
1 1/2 cups milk
1 to 1 3/4 cups water
8 ounces elbow macaroni
1/2 teaspoon salt
freshly ground black pepper to taste
4 ounces sharp cheddar cheese, grated
optional, 1/2 teaspoon garlic powder or 1/2 teaspoon dry mustard
In a medium pot set over medium heat, combine milk, 1 cup water, macaroni, salt and pepper. Bring to a low simmer stirring frequent to prevent macaroni from clumping anthem milk from boiling over.
Once the mixture simmers, reduce the heat to low and stir continuously until pasta is done to your liking, about 8 to 10 minutes. The macaroni will absorb the liquid while cooking so stir in addition water as needed. 1/4 cup at a time.
Once pasta is done and sauce is creamy remove the pot from heat and gradually stir in the grated cheddar 1/3 cup at a time till smooth and melted. You can also stir in garlic powder and or dry mustard at this point for extra flavor, if desire. Makes 4-6 servings.

It does look like a nice sun room! I like that recipe for the mac and cheese. Might be interesting to try it down the road. So true with "this too will pass." Our lives seem to go up and down, good times and bad. It is nice to know when we are going through the bad that it won't last forever.

I need to share this with my son! He sure didn't get it from me, but is the epitome of someone who 'rolls with the blows' .... with a smile.
One of his favorite pieces of advice is "Embrace the chaos." I guess that's akin to something my dad told me when the stallion on the merry-go-round would go up and down -- Breathe!
