April 22nd, National Jelly Bean Day, is a time to enjoy gobs and gobs of jelly beans. Anyone who loves jelly beans, knows they are not just for Easter. Sure, they are very popular at Easter. But, they are also enjoyed year round. The flavors are limited only by the imagination of candy makers. If you've never enjoyed the multitude of flavors in a box of gourmet jelly beans, then it might just be the time to head right out to the store and buy some.
Jelly beans date back to at least the 1860's. Advertisements promoted sending jelly beans to Union troops fighting in the Civil War. The original candy maker is unknown. The tastiest way to celebrate Jelly Bean Day is by eating lots of jelly beans!

And didn’t just pick out the pretty or smart people
or red or black jelly beans
But loved them all for what they are!
It seems that most everyone has leftover Jelly Beans after Easter is over. I saw this idea for a cute snack mix using orange jelly beans. It would be especially nice to have when watching the Frozen movie that has been so popular this year.
Olaf's Snack Mix
marshmallows, which represent snow
pretzel sticks, arms/hair
orange jelly beans, his nose
and chocolate covered raisins, representing coal
With spring here maybe thinking about snow isn’t quite the thing so here’s another recipe that sounds like quite a treat.
Jelly Bean Fudge
1 jar, 7oz marshmallow cream
1 bag, 11oz white chocolate morsels
2 cup granulated sugar
3/4 cup heavy cream
3/4 cup unsalted butter
pinch of salt
1 1/2 cup jelly beans
2 cups more jelly beans for garnish
1 Tbsp green sanding sugar
Prepare a 9 inch springform pan by lining it with foil. Wrap foil around an empty fruit or vegetable can. Place in center of springform pan and set aside. I think I’d use my bundt cake pan instead.
In a large mixing bowl, add the marshmallow cream and white chocolate morsels. Set aside. In a large saucepan, add sugar, heavy cream, unsalted butter and salt. Bring to a boil over medium high heat, stirring frequently. Once boiling, continue to boil for a full 4 minutes, stirring constantly. Remove from heat and pour over marshmallow mixture. Using an electric mixer, blend for about one minutes, until morsels are melted and mixture is smooth.
Fold in the 1 1/2 cups jelly beans, until combined. Pour into prepared pan. Sprinkle with green sanding sugar. Using part of the remaining jelly beans, arrange into flowers on top of fudge. Once decorated, place fudge, uncovered, into the refrigerator for 4 hours, or overnight.
When ready to serve, remove fudge from springform pan by releasing the latch. Unwrap the foil and place on a serving plate. You may need to use a butter knife to gently cut and remove the center can, wiggling it out gently. Fill center of ring with remaining Jelly Belly jelly beans. Serve with a knife so guests can cut their own pieces!

I’m thinking I’ll save this recipe to try out next Easter. I still have plenty of Easter candy around here and don’t really need any more right now.

I liked that Jelly Bean Prayer and the recipe for Olaf's Snack Mix. Son's girlfriend's daughter loves the movie Frozen, might have to make some of this for her :)
I like jelly beans, we didn't get any this year for Easter, which was a good thing, I think, but always liked the red ones the best :)
