Today is National Watermelon Day! Watermelon is a fruit enjoyed by many and is a favorite of summertime events such as picnics and fairs. Watermelon is 92% water, which is why it is so refreshing.

More and more these days you can find watermelon in the grocery store just about any time of year, but when you get a good homegrown on from a local roadside market, you’ll find they are the best. The taste is incomparable. I’m hoping to find one soon around here. More and more fresh fruits and veggies are becoming available here now. It’s a short season for us but I for one do my best to enjoy it.
Watermelon has no fat or cholesterol which makes it a parents favorite snack to give to their children. Watermelon is an excellent source of vitamin A, B6, C, potassium and fiber which we all struggle to get more of. These vitamins are vital to good health and disease prevention.
A great health fact to know about watermelons is that it's an excellent source of lycopene. Lycopene is an antioxidant that is only found in a few red plant foods. It has been shown to reduce the risk of certain cancers. It also qualifies for a great heart healthy food too!
Heres a tasty recipe for watermelon lemonade you might want to try out. The mild flavor of the watermelon blends nicely with the tart lemon juice. My old blender, which is a relic from when I first got married and is still working will have to be dug out and used to make this refreshing drink. I’ll be trying it out soon.
6 cups watermelon
1 cup water
1/3 cup sugar
1/2 cup lemon juice
Remove as many seeds as you can from the watermelon flesh. Place watermelon and water in a blender and blend until smooth. Strain liquid into a pitcher, along with sugar and lemon juice. Stir until sugar is dissolved. Refrigerate until chilled, then serve.

I have counted at least 3 things every day that I'm thankful for over a year and have now reached 1900 gifts. On my way to 2000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

1911. for Sunday, always a day of rest for me
1912. for a wonderful face time visit yesterday with my newest granddaughter.
Enter into His courts with thanksgiving — and in His presence is fullness of Joy!

Glad you got to see your new grand daughter yesterday, Ma! I liked that recipe for the watermelon lemonade; that would be refreshing in hot weather! Watermelon is such a great treat, I know whenever it is serve anywhere, whether at picnics or potlucks, it is always a favorite of everyone :)
