It is Finallly Summer Day! It's the longest day of the year. The amount of daylight only goes down from here. Summer Solstice is the meteorological start of summer. It's time to enjoy vacations, great weather, pools, baseballs, and everything else that goes along with the favorite season of kids and most adults. Grab your favorite beverage and enjoy the season, because for many of us it is all too short. Whatever you have planned, enjoy the feel good effect of daylight the one thing that brings out the ray of sunshine in all of us.

I do love sunshine, but here lately we had some very hot and humid days . I don’t like being in the a/c stuck inside at all, but when it comes to being comfortable, I have to say, I choose comfort. I guess it'll take awhile for my body to adjust to summertime. Hopefully not all our days this summer will be like they have been this week. We had more than enough rain, too much humidity and an awful lot of windy days too that brought some storms our way. For two mornings in a row now we have some cooler temps and I have been able to open up the windows for a while and turned of the a/c. It is surprisingly nice and cool out.
It seems that nothing tames the heat better than a crisp salad, or a frozen treat on a hot day. Head to the porch with a glass of lemonade and a refreshing salad then finish your perfect summer meal with an Ice Cream Sandwich
I found this recipe recently and plan on having it soon:
BLT Salad
Caesar BLT Pasta Salad
16 oz. mini farfalle (bowties)
1 lb. bacon
1 pint sugar plum tomatoes, sliced
1 c. Caesar dressing
1 c. sliced black olives, optional
1/2 c. parmesan
1 clove garlic, minced
1/4 c. olive oil
Juice of one lemon
4 c. chopped romaine lettuce
Cook the pasta in a large pot of salted water to al dente, then drain. Toss it with the olive oil and lemon juice and marinate it in the refrigerator overnight. Cut the bacon into bite size pieces and cook in a large skillet until crisp. Drain on paper towels. Discard the bacon grease; leaving just a tablespoon or so in the skillet. Add the sliced tomatoes and minced garlic and toss in the skillet for just a couple of minutes to cook the garlic and soften the tomatoes. Remove from heat and let sit until cool.
Mix in the Caesar dressing, bacon, tomato mixture, olives and Parmesan, then toss in the chopped lettuce at the end and it’s ready to go!
I’m planning on lots of dinner salads like this on these hot days.

I have counted at least 3 things every day that I'm thankful for over a year and have now reached over 1700 gifts. On my way to 2000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

1782. for the laughter of children who tumble barefooted and bareheaded in the summer grass.

Your weather is the same as mine!! I'm ready for the FALL countdown!! The recipe sounds so good!! I just might have to try that as well!!
Happy Summer!!!! I heard on the radio the other day that the ice cream sandwich is the #1 ice cream bought off the ice cream truck... It will only be 99 today but the triple digits are coming... sunset will be 8:19 so it will be dark by time I get out of work... didn't it use to stay light til 9pm in the summer... :)
I do hope there are plenty of pleasantly warm summer days for you to enjoy your outside and porch, Ma. I like that recipe too for the salad. That would be refreshing on a hot day indeed!
