Today is Cinco de Mayo Day. What Cinco de Mayo has come to be, is much more than one battle in the colonial history of Mexico. Rather, it has come to signify Hispanic and Mexican pride and a time to celebrate the rich culture.
Today, this holiday is celebrated by Mexicans, and especially the Hispanic community in the U.S. It is a time of song, dance, partying, and in general a time to be proud to be of Hispanic descent. Cinco de Mayo means the 5th of May.
It seems to me that today is a great day to celebrate !

There are many different cultures in my family tree but there are not any Mexican ancestors. My heritage is rich with European traditions. My family connections include some Irish, some English, German, lots of Hungarian, a tiny bit of French and even an American Indian descendant, but that doesn’t mean we can’t celebrate with other cultures. We can all take pride in who we are where are ancestors came from. Here in the US we are one huge melting pot of lots of different nationalities and I think that it is important to recognize them all. We all have some roots from somewhere else. So many have come to this great country for the freedoms it has to offer. So today I’ll be celebrating and maybe doing a little partying of my own.
It’s a great day to cook up one of my favorite Mexican foods too.. a burrito.
I found this recipe for a breakfast burrito and hope to try it soon
4 breakfast pork sausage links, cut into 1/2-inch pieces
1/2 sliced red onions
1/2 cup each red and green pepper strips
4 eggs, beaten
4 tortillas, 8 inch
1 cup shredded Cheddar Cheese
Cook sausage, onions and peppers in medium nonstick skillet on medium heat 4 to 5 min. or until sausage is done and vegetables are crisp-tender. Remove from skillet. Add eggs to skillet; cook and stir 2 minutes or until set. Return sausage mixture to skillet; stir. Top with cheese. Spoon onto tortillas; fold in opposite sides of each tortilla, then roll up burrito style.

I have counted at least 3 things every day that I'm thankful for over a year and have now reached 1600 gifts. On my way to 2000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

I liked the picture of you in the sombrero, Ma! Because of our work schedules today, we celebrated Cinco de Mayo yesterday; made shrimp and fish tacos and homemade guacomole, delicious :)
So true about the United States being a big melting pot, but its good too because we can learn about different ethnic groups and their customs and their food :)
