National Freedom Day
Established in 1948 to commemorate the signing by Abraham Lincoln of a resolution that later became the 13th Amendment outlawing slavery. It is a day for all Americans to promote harmony and equal opportunity. Many towns have Freedom Day celebrations and in Philadelphia a wreath of flowers is placed around the Liberty Bell.
February is National Weddings Month. Most engagements take place between Christmas and Valentine's Day, and most future brides start serious planning in February for summer weddings

February is National Hot Breakfast Month
Breakfast Casserole
1 package 16 oz ground pork breakfast sausage
12 eggs
1 can 10.75 oz condensed cream of mushroom soup
1 soup can (from mushroom soup) milk
1 can 4.5 oz sliced mushrooms, drained
1 package 32 oz frozen potato rounds
1/2 cup shredded Cheddar cheese
Place sausage in a skillet over medium-high heat, and cook until evenly brown. Drain, and set aside. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, beat together the eggs, condensed cream of mushroom soup, and milk. Stir in the sausage and mushrooms, and pour into the prepared baking dish. Mix in the frozen potato rounds. Bake in preheated oven for 45 to 50 minutes. Sprinkle with cheese, and bake an additional 10 minutes, or until cheese is melted.

AROUND HOME
Today is also Hula in the Coola Day, time for fun at a winter luau. Shorts and flip-flops, please. For those of you currently pining for the warmer days of summer, fret not, today's holiday allows you to momentarily pretend that it's not really cold outside. Hula in the Coola Day encourages everyone to stash away their coats, scarves, gloves, and thermal underwear, and don shorts , sunglasses, and leis and have a wild luau party!
I love BEACH days and this looks like it might just be a grand day to dream about shorts and flip flops. It's just too cold for me to stash my thermals away.
