THE BRIGHT SIDE

Decide to be happy today, to live with what is yours – your family, your business, your job, your luck. If you can’t have what you like, maybe you can like what you have.

Just for today, be kind, cheerful, agreeable, responsive, caring, and understanding. Be your best, dress your best, talk softly, and look for the bright side of things. Praise people for what they do and do not criticize them for what they cannot do. If someone does something stupid, forgive and forget. After all, it’s just for one day.

Who knows, it might turn out to be a nice day.

THE BRIGHT SIDE

I'm looking out the window
and the day is drab and dreary,
And I'm trying to console myself
by thinking something cheery
I know it's simply horrible
to get in such a slump
And I also know it's up to me
to get across the hump
And I realize I'm selfish
to mention this to you
For, gee, you might be feeling
a little 'low-down' too
but often when I feel like this
I tell myself it's true
That I am not the only one
who feels 'low-down and blue'
And just knowing there are others
who feel the way I do
Renews my sinking spirit
and keeps me smiling through
and know that it's natural
to take a 'spirit-dive'
Provides the spunk and courage
to hang on and survive
And while there are a lot of moods
that we can drive away
by looking on the BRIGHT SIDE
in all we do and say,
There also is a loneliness
that God meant us to feel
But, gee, it sure is mighty hard
to know which one is real
And I'd hate to be a 'sad sack'
who never saw the sun
And just complained that every day
was such a dreary one.
But I know that all the dark days
are just part of God's plan
We should accept them graciously
and do the best we can...
So I'll just keep on trying
for I know it's 'Gospel true'
there never was a cloud so dark
the sun could not shine through!

I send this little letter out each morning to all my family and friends and even to a few people that I've never met. Many of them send it on to others too. So in order to make it available to more people I post the 'brighter side' of the news here each day in this journal.

The letter began as an effort to keep in touch with my family as they are spread out in all directions. My family, friends and God are the most important things in my life.

You'll find quotes, poems and stories and even a few recipes included in this newsletter. I try to find something new each day to share.

In a world that very often publishes only the dark side of things I felt that others would be encouraged to hear about

We were able to get together with this little one and celebrate this past Saturday but today is the actual birthday!

Chocolate Souffle Day

The word souffle comes from the French verb meaning to puff up. It's an apt term for chocolate souffle, a light and airy dessert made from a few basic ingredients like chocolate or cocoa, egg whites, and custard

Chocolate Souffle Cookies

6 ounces bittersweet or semi-sweet chocolate
2 large egg whites, at room temperature
1/8 teaspoon cream of tartar
1/2 teaspoon pure vanilla extract
1/4 cup sugar
3/4 cup finely chopped walnuts

Position racks in the upper and lower third of the oven. Preheat the oven to 350 degrees Fahrenheit. Lightly grease two baking sheets or line them with parchment paper.

Melt the chocolate in a double boiler and set aside.

Using an electric hand mixer, beat the egg whites with the cream of tarter until soft peaks form.

With the beater running, gradually add the vanilla and sugar until the egg whites hold stiff peaks. Pour the nuts and melted chocolate over the whipped whites.

Gently fold the mixture with a large rubber spatula, trying not to break the bubbles of the egg whites, until the color is uniform.

Immediately drop level measuring teaspoons of the batter onto the baking sheets, leaving at least 1 inch between cookies.

Bake until the cookies are shiny and cracked, 10 to 12 minutes. They should be firm on the outside but still gooey inside when you press them.

Slide the parchment paper liners onto cooling racks and cool.

Just sharing a little trivial with you all today...

It's National Tooth Fairy Day!

Mystical legends, stories, and traditions have been passed along for hundreds of years -- all surrounding the loss of baby teeth. In some cultures, children's teeth were buried in order to hide them from witches and evil spirits who would use the tooth's powers for voodoo. The Vikings believed that children's teeth had a magical power in them that would help them fight in battle. They would even pay their children for their lost baby teeth so that they could be used to string onto battle necklaces and other jewelry.

A myth eventually arose about a Tooth Mouse who would scamper around town and steal children's teeth in the middle of the night. This story of the mouse soon transformed into the story of the Tooth Fairy, who would leave treasures under the children's pillows in exchange for their lost teeth.

The traditions and legend of the Tooth Fairy are still practiced today all around the world. It is considered a useful practice by many parents because it gives their children something to look forward to when they lose their teeth. And so year after year, baby teeth are placed under children's pillows at night in hopes of waking up to a wonderful surprise from none other than the Tooth Fairy!
