Chocolate Souffle Day

The word souffle comes from the French verb meaning to puff up. It's an apt term for chocolate souffle, a light and airy dessert made from a few basic ingredients like chocolate or cocoa, egg whites, and custard

Chocolate Souffle Cookies

6 ounces bittersweet or semi-sweet chocolate
2 large egg whites, at room temperature
1/8 teaspoon cream of tartar
1/2 teaspoon pure vanilla extract
1/4 cup sugar
3/4 cup finely chopped walnuts

Position racks in the upper and lower third of the oven. Preheat the oven to 350 degrees Fahrenheit. Lightly grease two baking sheets or line them with parchment paper.

Melt the chocolate in a double boiler and set aside.

Using an electric hand mixer, beat the egg whites with the cream of tarter until soft peaks form.

With the beater running, gradually add the vanilla and sugar until the egg whites hold stiff peaks. Pour the nuts and melted chocolate over the whipped whites.

Gently fold the mixture with a large rubber spatula, trying not to break the bubbles of the egg whites, until the color is uniform.

Immediately drop level measuring teaspoons of the batter onto the baking sheets, leaving at least 1 inch between cookies.

Bake until the cookies are shiny and cracked, 10 to 12 minutes. They should be firm on the outside but still gooey inside when you press them.

Slide the parchment paper liners onto cooling racks and cool.

Just sharing a little trivial with you all today...

It's National Tooth Fairy Day!

Mystical legends, stories, and traditions have been passed along for hundreds of years -- all surrounding the loss of baby teeth. In some cultures, children's teeth were buried in order to hide them from witches and evil spirits who would use the tooth's powers for voodoo. The Vikings believed that children's teeth had a magical power in them that would help them fight in battle. They would even pay their children for their lost baby teeth so that they could be used to string onto battle necklaces and other jewelry.

A myth eventually arose about a Tooth Mouse who would scamper around town and steal children's teeth in the middle of the night. This story of the mouse soon transformed into the story of the Tooth Fairy, who would leave treasures under the children's pillows in exchange for their lost teeth.

The traditions and legend of the Tooth Fairy are still practiced today all around the world. It is considered a useful practice by many parents because it gives their children something to look forward to when they lose their teeth. And so year after year, baby teeth are placed under children's pillows at night in hopes of waking up to a wonderful surprise from none other than the Tooth Fairy!

It's SUNDAY!

No Brainer Day - now this day is for me!

By definition, a No brainer is dong something that is simple, easy, obvious, and/or totally logical. Therefore, today is the day for you to do all those no brainer tasks and activities. If a project requires thinking, study, or analysis of any kind, then its not the chore to do today. A whole day devoted to obvious choices. Its a no brainer!.

National Strawberry Day

The delicate, delicious strawberry. So perishable, yet so versatile. Don't let the cold winter wind deter you from enjoying them. The unreliable groundhog predicted an early spring for us this year but National Strawberry Days says that the growing season is just round the corner.

Strawberry Spinach Salad

2 tbs balsamic vinegar

2 tbs rice vinegar

1 1/2 tbs honey

2 tsp Dijon Mustard

1/2 tsp black pepper

8 cups torn fresh spinach leaves

1 cup sliced strawberries

1/2 cup chopped red onions

Combine balsamic vinegar, rice vinegar, honey, mustard, and black pepper.

Toss spinach, strawberries and red onions with dressing.

Makes 4 servings

PRAYERS

Lord, we pray this weekend for guidance in making the right choices each day. Help us to connect with people and events that are good positive and upbeat, that increase our chances of balance in our lives.

Yesterday was a great celebration. It was good to be with so many people that wanted to wish our Little Lucky guy a Happy Birthday!

Today I'll be off to church as always and then home again for a quiet day before my busy week with Mr. Wonderful begins tomorrow. Next Sunday will be his special day as we'll be celebrating his baptism. It's grand that we have another reason to get together again so soon!
