It's MONDAY!
After a great Easter weekend I’ll be off to what will be my final week of work!
I cannot even begin to tell you all how wonderful that is to me. I’ve worked so many years doing what I had to in order to get by and now comes my reward for a job well done. I am so HAPPY that the days of going off to work are about to end.
There will be lots of work coming my way but it will be what I want to do and with the good Lord’s help I’m sure I’ll be doing some things that He has planned for me too. I always think of a quote I once read that said…
If I get to pick what I want to do, then it's play...if someone else tells me that I have to do it, then it's work.

THINKING
When God's word comes alive in our hearts, we realize that Jesus is alive. Faith in the risen Jesus comes through hearing God's word
DD has started the tradition of a Easter Piñata for the grandchildren at Easter and here are our Angel and our Star, along with DS#5 trying to knock it down when we had our family get together last Saturday.
One of the wonder traditions we also have is that of hearing God’s word each Sunday at church. We don’t have to wait for Sundays, we can open our Bibles every day and read the wonderful words for ourselves.
NEW IN THE KITCHEN
Leftover Ham for Dinner
Impossible pies are a quick and easy way to use leftovers. These easy pies are made by combining a baking mix (at my house I use Bisquick) with other pie ingredients, then baking in a standard pie pan. There really isn't a crust that forms during baking; the mixture holds together like a pie and is sliced and served like a pie.
1-1/2 cups milk
3/4 cup biscuit mix
3 eggs
salt and pepper
Approx. 3/4 to 1 cup chopped cooked Ham,
½ to ¾ cup sliced raw or cooked Mushrooms
Approx. 3/4 to 1 cup shredded cheese
Use a regular 9-in pie pan
Heat oven to 400º
Grease pie plate. Sprinkle filling ingredients (meat, mushrooms and cheese) into pie plate.
Beat other ingredients until smooth, 15-30 seconds in a blender, or 1 minute on high with a hand beater, or 2 minutes by hand.
Pour into pie plate.
Bake approx. 25-35 minutes, until knife inserted in center comes out clean and top is golden brown.
Cool 5 minutes. 4 to 8 servings.

AROUND HOME
There is little besides work on my calendar for the week ahead. On Friday afternoon you’ll probably hear me as I do the happy dance all the way home. Oh happy day, Oh happy day! From then on I won’t be on any kind of a strict schedule. I know that on the 16th of the month the campground will open so I’ll probably go there for awhile. Then more toward the end of the month I’ll go help out for awhile at DS#6’s house. Have I mentioned that I’m so excited and happy? Don’t be surprised if you hear it again. It will take awhile for me to get used to the whole retirement thing for sure.
FAMILY
I had a great visit with my sisters and my BIL yesterday. It’s always good to get together with them. I also got to visit with one of my nephews and his wife. Holidays are wonderful because they bring together those we hold dear.

Always love those "impossible" pies. My kids eat them and that makes me happy!
