Today is National It’s My Party Day which is the perfect day to celebrate whatever you want.
Gather friends and family to help recognize the day, or turn on some music and have a dance party by yourself. Either way, be sure your party soundtrack includes musician Lesley Gore’s hit, It’s My Party, a popular song that came out in 1963. It’s the perfect tune to help set the stage for your celebration.
Whether you keep it small and simple or big and bold, celebrate this holiday with fun and enthusiasm that you can muster. Extra points for party hats!

When DD’s son and DS#5’s children were little, we gathered on a Sunday for dinner. Their children needed some exercise so my daughter turned on some music and we all began to dance. The kids had a lot of fun and we all enjoyed some laughter and fun.
Dancing is wonderful exercise and makes us happy too. That’s how I will celebrate today, dancing to the music on the radio. I had my Alexa play a version of It’s my Party !
It’s Wednesday and my day to cook here and make a new menu for next week so I can go grocery shopping once again. The days are going by so fast that it seems like I just did that but here is the new menu:
Monday - Bean Burritos
Wednesday - Stovetop Chicken and Broccoli Casserole
Friday - Zucchini Pasta
Weekend - Favorite Beef Roast Dinner
On the menu for today is:
Vegetable and Beef Stuffed Red Peppers
Makes 6 servings
3 red peppers cut in half lengthwise
1lb. lean ground beef
1 Tbsp olive oil
1 medium zucchini, chopped
1 yellow summer squash, chopped
1 onion finely chopped
1/3 cup finely chopped green pepper
2 cups coarsely chopped fresh spinach
4 garlic cloves, minced
1 cup ready to serve long grain wild rice
1 can tomato sauce 8 oz.
1/2 cup shredded mozzarella cheese
3 slices provolone cheese, halved
Preheat oven to 350 degrees. Cut and discard tops from red peppers. Remove seeds and cut in half lengthwise . In a pan of boiling water cook peppers until crisp tender, about 5 minutes. Drain and rinse.
In a skillet, cook beef over medium heat until no longer pink, breaking into crumbles. Remove with a slotted spoon; pour off drippings
In the same pan, heat oil over medium heat, saute the zucchini, yellow squash, onion and green pepper until tender, about 5 minutes. Add spinach and garlic and cook and stir until spinach is wilted, about 1 minute. Stir in cooked beef , rice, tomato sauce and mozzarella cheese.
Place red pepper halves in a baking dish . Fill them with meat mixture. Bake, covered, until peppers are tender, about 45 minutes. Top with Provolone cheese, bake uncovered until cheese is melted. about 5 minutes more.
I prefer to mix my meat and vegetables raw. That would mean I’ll have bake these longer, close to 1 1/2 hours. The recipe I used to use was a crockpot recipe and I think I prefer that, but I will follow this recipe today just to see how I like it.
1/2 stuffed pepper equals one serving .
You could also add some mushrooms to the mixture if you desire.

I'm not much of a dancer, but sure enjoyed Lesley's music back in the day.
It's my party ... don't forget the lyrics! Then, "It's Judy's turn to cry ..." (My dogs think I'm nuts.)
