Hallmark!
Today is National Boston Cream Pie Day which was invented by a man named Agustine F Anazin when working as chef at Parker House. Boston Cream Pie is believed to have been created in the 1870’s around the same time the Parker House roll appeared. The famous pie has been referred to in many different names. Including American Pudding Cake, Washington Pie, Chocolate Cream Pie, Parker House Chocolate Cream Pie, and finally Boston Cream Pie.
In 1996, Boston Cream Pie became the official dessert of Massachusetts in a bill sponsored by Norton High School. The bill defeated Indian Pudding and Toll House cookies as the states official dessert. It now comes in a popular donut, coffee and Ice Cream flavor.
Although it is called pie, Boston Cream Pie is actually a cake. It consists of layers of sponge cake with a thick vanilla Custard filling. It is usually frosted with a chocolate glaze but it can also be topped with confectionary sugar. The dessert is served in wedges just like a pie.
To celebrate today, enjoy a slice of Boston Cream Pie!

THOUGHT FOR TODAY
A meal is not complete until you have a dessert.

I don’t eat or make many cakes anymore. They all have sugar in them which is something I’ve given up. I have an artificial sweetener so I suppose I could make my own. But not today. I used to have it for dessert often. I would sometime make it but most of the time would get it from the bakery. I may have to splurge and pick one up at the store. A little piece now and then won’t hurt. I eat most things in moderation these days and cut out the sugar and salt and have lost weight. I sometimes have a small piece of candy, or pie as a reward for sticking to my diet. It helps to quiet the cravings I have.
I’m supposed to be making something new to eat today and on the menu is:
One Pot Turkey Vegetable Soup
Makes 4 servings
2 Tbsp olive oil
1 leek, white and green parts only, sliced
2 large stalks celery, sliced 1/8 inch thick
2 cloves garlic, minced
4 cups broth, chicken or turkey
2 sprigs fresh thyme leaves for garnish
1/4 tsp. ground pepper
2 cups shredded or diced leftover turkey or thick cut deli turkey
2 medium carrots, sliced diagonally in 2/3 inch thick slices
2 cup frozen peas.
Grated lemon zest and lemon wedges for garnish
Heat oil in a Dutch oven or other heavy pot over medium heat. Add leak and celery, cook stirring often, until vegetables have softened. Add garlic; cook stirring constantly until fragrant, about 1 minute.
Add broth, thyme , and pepper, bring to a boil over high heat. Reduce heat to medium low, simmer, stirring occasionally until flavors meld, about 5 minutes. Stir in turkey and carrots. cook undisturbed until carrots are tender, about 15 minutes. Remove and discard the thyme sprigs. Stir in peas and cook undisturbed for 30 seconds.
Divide the soup evenly among 4 bowls. Garnish with thyme leaves and lemon zest, if desired, and serve with lemon wedges if desired.
I happen to have leftover turkey breast in the freezer so this will be a good way to use it up. It will refrigerate for up to 3 days or freeze up to 2 months.
I will eat up any left overs this coming week for lunch. Although we are to warm up some today, It will be still cool enough to enjoy some hot soup. I got a salt free vegetable seasoning to add to give it some extra flavor.
Slowly but surely I’m using up some of the food in my freezer.
I couldn’t find any pictures of Boston Cream Pie, all I could find was chocolate iced donuts with cream filling. They are another thing I crave now and then.
I hope you all have a GREAT start to this new week. Happy Monday!

Boston Cream Donuts - finally a donut I really don't care for - lol - I love donuts. ☺
Love custard filling in the pie.
That's a good idea, buying only one doughnut from the bakery so you're not tempted to eat more. (Like me, lol)
Funny, I just had leftover Boston Butt for lunch and you're having Boston Cream Pie. Yours definitely sounds better.
I love donuts, not sure about Boston Creme though. I have heard that most of my life, but as far as I know I haven/t tried it. I am sure since it has chocolate on the top Sherry has. i just asked my girl, she says it is ok, well the chocolate is good!
