Today is National Cherry Cobbler Day which celebrates a baked dessert made with rich fruit filling and biscuit dough crust. Back in the 19th century, pioneers of the American West had to adapt many recipes because of severe lack of ingredients. The rational pie evolved into the cobbler, which often served as the main dish of the meal.
No one knows how cobblers got their name, but there are several theories. One source suggests that world cobbler evolved from cobeler, which was a specific type of bowl used in cooking. Other culinary historians believe the name may have been inspired by the desserts resemblance to cobblestone.
To celebrate today, bake your own cobbler to enjoy for dinner tonight!

Sadly a cobbler is not on the menu for today, although I do love them. On the menu today is:
Cool and Crunchy Chicken Salad
Makes 6 servings
1/2 cup mayonaise
2 Tbsp minced fresh parsley
1 Tbsp. lemon juice
1 Tbsp cider vinegar
1 tsp spicy brown mustard
1/4 tsp. pepper
3 cups cubed cooked chicken
1 cup red seedless grapes, halved
1 cup thinly sliced celery
1 cup pecan halves, toasted
Lettuce leaves
In a large bowl, mix first 8 ingredients until blended. Add chicken, grapes, celery and pecans, toss to coat. Serve on lettuce.
I won’t be using this recipe today because I bought some chicken salad at the store recently, only it doesn’t have grapes or pecans in it, so I’ll add it to what I have. I like to chop up the pecans some and not put the whole half in.
It’s also my day to make up a new menu for next week to do my grocery shopping from. On the menu for next week is:
Monday- Smothered Cabbage
Wednesday-Green Pepper Steak
Friday- Winning New England Clam Chowder
Weekend- Margarita Chicken
Today is to be sunny but only in the high 50’s. Much cooler outside but not bad.

The cherry is one fruit that has never been cooked at our house. I have eaten many pounds of Cherries and een enjoy cherry cobbler when eating out, but we have never cooked them. I guess mainly because we have never had a cherry tree. I have known only one cherry tree that cherries lived to maturity and the lady allowed me to pick some, but the only way she could keep the birds away was that her family stretched a net over the tree. LOL
Enjoyed the visit and history lesson. I do love me some cherries.....

I love cobblers! In fact, one of my friends from church had her hubby bring over a peach cobbler the other night, still steaming!
That recipe sounds like a winner. We've no grapes, but I'm pretty sure there's everything else for today's lunch. Yum!
