Today is Sun Day which was designated by United States President Jimmy Carter. It is specifically devoted to solar power. It became an international event in 1994.
On Sun Day we honor the lone star that illuminates our world, be it has underlined the immense energy potential we have yet to completely realize.
Solar energy is one of safest ecological energy sources, it does not pollute the environment nor have long term side effects like fossil fuels do. It is comparatively cheaper and can give an equal amount of energy to power stations around the globe.
The event was introduced in Europe by the European Division of the International Solar Society. In certain nations, the holiday has been extended from a single holiday to a week . Many events throughout the world encourage the usage of renewable and environmentally beneficial solar energy sources.
Celebrate today and learn more about solar energy.

I am powered by electricity and don’t have an solar power here except for the landscaping lights outside around the house, they are powered by the sun.
One of my sons has had solar panels installed at his house and says it was expensive to install but worth it in the long run. Even Ohio, where we have more clouds than sunshine, it can be a vital source of energy.
One thing I know is that I’m very effected by the sunshine. It always makes me feel better and happier. It makes me smile!
We’ve been having some cloudy and rainy days this week that have been chilly and we could really use more sun here. One thing I enjoyed so much when I visited Florida is that they had so much sunshine ! I’d watch it rise and set each day and spent a lot of time outside.
Sunshine is definitely one of my favorite things so I will be celebrating today!
It’s my day to go grocery shopping and I made up a menu for next week to do my shopping from.
On at the menu for next week is:
Monday - Caprese Turkey Burgers
Wednesday - White Bean, Kale and Kielbassa Soup
Friday - On Pot Pasta with Peas and Parmesan
Weekend - Chicken and Broccoli Casserole
And on the menu for today is:
Chicken and Spinach Pasta with Lemon
Makes 4 servings
8 oz. penne pasta
2 Tbsp. olive oil
1 lb cooked chicken breasts cut into bite size pieces.
1/2 tsp ground pepper
4 cloves garlic, minced
1/2 cup dry white wine
Juice and zest of 1 lemon
10 cups chopped fresh spinach
4 Tbsp. grated Parmesan cheese, divided
Cook pasta according to package directions. drain and set aside.
Meanwhile heat oil in a skillet over medium high heat. Add chicken and pepper, cook stirring occasionally until warmed through. Add garlic and cook stirring until fragrant. Stir in wine and lemon juice and zest. Bring to a simmer.
Remove from heat and stir in spinach and cooked pasta. Cover and let stand until spinach is wilted. Divide among 4 plates and top each serving with 1 Tbsp. Parmesan.
It’s an easy and delicious meal. It has everything you need for a meal in one pan.
It’s to be another rainy day here at my house, I may put off the shopping until tomorrow when the weather will be much nicer.

Good for your son, investing in those solar panels! How I wish we'd done that when our house was being built in Arizona. Man oh man, the sun out there is so intense, it actually 'ate' our patio furniture webbing and melted the speakers on the back deck of my Camry. Yep, the sun's rays are nothing to be taken lightly; makes me wonder how folks back in the olden days lived without central air.
