Today is Nurses Day which is the first day of Nurses Week, which begins each year on May 6 and ends May 12, Florence Nightengale’s birthday. Today we celebrate the meaningful work the nurses do every day, and especially recently during the global health crisis.
In 1953, Dorothy Sutherland and employee of the the U.S. Department of Health, sent a letter to President Eisenhower to recommend a National Nurses Day. Although Eisenhower did not make and official proclamation, people began celebrating Nurses Day the following year. Twenty years later President Nixon made it an official holiday.
To celebrate today, remember to thank all the nurses in your life for their amazing work and dedication.

As my oldest granddaughter is a nurse, I will definitely be celebrating. She tells about the hard work she is doing and how much she enjoys it too. Although nurses are over worked and under paid, they have important work to do.
I never wanted to be a nurse but due to the fact that I had a large family, I nursed a lot of sick kids. I think all parent do.
Today I’d usually be cooking for the weekend, but since I have a party to attend for my granddaughter’s 1st Communion I won’t be cooking today but I decided to share what was on my menu for today anyway. It sounds good and I’ll probably fix it another time.
Creamy Chicken, Mushroom,and Spinach Casserole
Makes 6 servings
6 oz. pasta such as rotini, or elbows
3 Tbsp. olive oil, divided
1 small onion, chopped
8 oz. mushrooms, halved if large and sliced
1/2 tsp. ground pepper, divided
2 cloves garlic, minced
2 Tbsp. flour
1 1/2 cups milk
1 tsp. Dijon mustard
3/4 cup grated Parmesan cheese, divided
2 cups chopped or shredded cooked chicken
1 10 oz package frozen or fresh chopped spinach.
Preheat oven to 400 degrees. Bring large pot of water to boil. Add pasta and cook according to package directions. Drain and set aside.
Meanwhile, heat 2 Tbsp oil in a large ovenproof skillet, like cast iron, over medium heat. Add onion, cook stirring until softened. Add mushrooms and 1/4 tsp pepper. Cook stirring until softened. Add garlic; cook one minute more and then transfer to a large bowl.
Add remaining 1 Tbsp oil to the pan. Sprinkle flour; cook stirring for 1 minute. Gradually add milk and mustard; cook, whisking constantly until sauce thickens. Remove from heat and stir in 1/2 cup Parmesan and the remaining 1/4 tsp pepper. Add the pasta, chicken, spinach and the mushroom mixture. Stir until well blended. Smooth the top and sprinkle with the remaining 1/4 cup of Parmesan.
Bake intill bubbling, about 15 minutes.
This is to be the best day we’ve had in a long time. Sunny and 70 degrees! My daughter and her family will be giving me a ride today as they live over an hour away. We’re suppose to eat at Olive Garden and then go back for a party and cake at DS#6’s house.

Your Grand daughter is beautiful, love those eyes, I bet patients to also.
We have two nurses in our family we are proud of them.
For many reasons I feel that nurses 'out think doctors' and are a great addition to this world, making it a better lace.

I'm so glad to know your pretty granddaughter loves what she does! I suspect there are fewer and fewer that do lately; so much burn-out for many reasons.
Having spent nearly 7 hours in the ER last night, I'm feeling blessed we were taken care of by one of the most caring RNs I've ever seen. Thankfully, Tom was released to follow-up with our primary, but I'm feeling compelled to write the hospital to tell them what a treasure they have in that young man.
