Today is Apple Pie day which celebrates the quintessential dessert. However popular it is, apple pie wasn’t actually invented in the U.S. It was invented in Europe sometime during the 14th century. The first apple pie recipe was printed by Geoffrey Chaucer in 1381 in England. The ingredients included apples, spices,raisins ,figs pears and saffron which was all enveloped in a pastry crust.
Several Dutch apple pie recipes date back to the late 15th century. They were similar to the English recipes except that they added a scoop of ice cream placed on top before serving.
This tradition of apple pie a la mode eventually caught on in America. Today many enjoy their warm apple pie topped with ice cream.
To celebrate today bake a delicious apple pie or pick one up from the bakery. Just don’t forget the ice cream!

Love is like a apple pie. Every one wants a piece of it, but only some can get it. When you love someone, it should be easy to say I love you. But if they love you back you shouldn’t have to say it at all, they should just know.

I won’t be baking today because I have people coming in to help me plant flowers today, but I do have a pie in the fridge that I can share with them. However is is a Lemon Meringue pie not apple. But it will have to make do.
I’m not supposed to have any sugar, but do splurge every now and then. It’s my way of celebrating the fact that I’ve done so well on my diet. And I only eat a small portion at a time.
I also have to cook for the weekend today and on the menu is:
Chicken and Broccoli Casserole
Makes 6 servings
1, 12 oz pkg bag frozen broccoli florets
1 tsp vegetable oil
1 cup chopped onion
2, 8 oz. pkgs pre sliced mushrooms
3 Tbsp. flour
1 1/2 cups milk
3 cups chopped boneless rotisserie chicken breast
1/2 cup sour cream
1/4 cup mayonnaise
1/2 tsp freshly ground black pepper
1/2 cup shredded Cheddar cheese
1/4 cup grated Parmesan cheese
Preheat broiler. Prepare broccoli in the microwave according to package directions.
Heat a large ovenproof skillet over medium high heat. Add oil to pan and swirl to coat. Add onions and mushrooms; cook 12 minutes or until mushrooms are brown and liquid evaporates, stirring occasionally. Sprinkle mushroom mixture with flour, cook 1 minute, stirring constantly. Stir in milk. Bring to a boil; cool until thick and bubbly. Stir in broccoli and chicken; cook 1 minute. Remove from heat. Stir in sour cream, mayonaise and pepper. Top evenly with cheeses; broil 2 minutes or until cheese melts.
I’m hoping this will be enough to feed my helpers today. I’ll also have a salad as a side and some applesauce for the kids.

I am an apple lover. I prefer one that crunches when bit. Also a little tart. As a kid I loved green apples.
My mama seldom made an apple pie that you sliced, BUT she made millions of Fried apple pies, I loved them. enjoyed the pictures, especially the kid throwing the apple down, that is a great shot!

My folks loved sharp cheddar cheese with their apple pie. Can't go wrong with that.
Yummy casserole! No apple pie here; one of our friends from church brought over a peach cobbler + I've a key lime pie in the freezer. Right now I'm so full of Caesar salad and pizza -- early Mother's Day meal with son and DIL -- I'm like to burst.
