Today is National Chocolate Chip Day which celebrates an essential ingredient dozens of delicious baked goods — chocolate chip cookies, pancakes, muffins, brownies, bagels and many more.
In the 1930’s, Ruth Graves Wakefield created the original chocolate chip cookie at her house in Whitman, Massachusetts . Ruth intended to bake chocolate cookies for her guests, but she ran out of bakers chocolate. She substituted with chopped up semisweet morsels and discovered that the pieces did not melt into the dough she expected. Her cookies were an instant hit. Today 25 per cent of all the cookies baked in the United States are chocolate chip!
To celebrate today, bake something yummy to enjoy with chocolate chips in it !

Thankfully I discovered that there are sugar free chocolate chips I can enjoy! I like them in a lot of things including pancakes.
It’s my day to cook up something new here but I’m not using any chocolate chips in it.
On the menu for today are:
Taco Bowls
Makes 10 servings
1 , 2 1/2 lb. boneless beef chuck roast, cut in half
1/2 cups beef broth
1 Tbsp. canola oil
1 onion, finely chopped
1 jalapeño pepper, seeded and finely chopped, optional
1 garlic clove, minced
3 tsp. chili powder
1 1/2 tsp ground cumin
2 cups canned crushed tomatoes in puree
1 cup salsa
5 cups hot cooked brown rice
1 can, 15 oz. black beans, rinsed, drained and warmed
Optional: sour cream, shredded cheddar cheese, sliced avocado, lime wedges and warmed tortillas.
Place beef and broth in a slow cooker. Cook covered on low for about 6 hours or until meat is tender.
Remove beef, discard juices. Return beef to slow cooker; shred with 2 forks.
In a large skillet heat oil over medium high heat; saute onion and pepper until softened. Add garlic and seasonings, Stir in tomatoes and salsa and bring to a boil. Add beef, stirring to combine. Cook covered on high for 1 hour or until flavors are blended.
For each serving, place 1/2 cup rice in a soup bowl. Top with beef mixture and beans. Serve with optional ingredients as desired.
As usual I will not be using the jalapeño pepper in mine as I like things on the mild side. And I will be cutting this recipe in half as it makes so much. I’ll be freezing half of the cooked and shredded roast beef for another time.
It’s to be a mostly sunny day today but the temps are only in the 50’s and on the cool side. I hope to spend some time out on the porch. If the sun shines it does warm up out there!

I read: Today 25 per cent of all the cookies baked in the United States are chocolate chip!'''' I knew they were popular, because they are around our house. Not me, but the rest of the gang love them; LOL I like 'em okay, but my cookie is the Oatmeal cookie.
And yes that cup of coffee is a welcome drink around our house too!

Already it's too warm to engage our oven ... but wow. That taco bowl sounds like it belongs on our "to-do" list. I love ordering taco bowls/salads in restaurants, but never thought about making one at home.
