Today is Blueberry Cheesecake Day which celebrates the classic variety of blueberry cheesecake. Cheesecake can be traced all the way back to Ancient Greece. The flavored versions are a recent innovation. People have come up with all sorts of interesting and unique cheesecake flavors.
The type of cheese used to make cheesecake has a huge impact on the flavor and the delicious flavor. American cheesecakes are made with cream cheese. Italian cheesecakes are made with ricotta, and German and Polish cheesecakes are made with quark, which is a type of curd cheese.
To celebrate today, enjoy a slice or two of heavenly blueberry cheese cake today!

Sadly, I have no blueberries in the fridge right now so will have to enjoy some blueberry yogurt that I do have on hand instead of cheese cake. I do love cheesecake and all the varieties you can find. My favorite is strawberry cheesecake.
Blueberries are very good for us and taste good too. I usually have some on hand but not today.I have no cheese cake either but they do sell them in the freezer section at the store. I’ll have to remember to get some next time I go shopping.
More and more I’m getting frozen fruit so I’ll have it on hand and not have to worry about it expiring before I can eat them.
On the menu for today is:
Winning New England Clam Chowder
Makes 5 servings
Oil for sautéing vegetables
2 celery ribs, chopped
1 onion, chopped
1 garlic clove, minced
3 small potatoes, peeled and cubed
1 cup water
1 bottle, 8 oz., clam juice
3 tsp. vegetable bullion granolas
1/4 tsp white pepper
1/4 tsp dried thyme
1/3 cup flour
2 cups half and half, divided
2 cans, 6.5 oz each, chopped clams undrained
Saute celery and onion in the oil. Add garlic. Cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered until potatoes are tender. About 20 minutes.
In a small bowl, combine flour and 1 cup half and half until smooth. Gradually stir into soup. Bring to a boil and stir until thickened.
Stir in clams and remaining half and half; heat through, do not boil. Serve hot.
Classic clam chowder toppings are oyster crackers, chopped cooked bacon and fresh chives.
It’s to be in the 60’s today, so it’s not too hot to enjoy some soup and it is delicious!

I am having blueberries on my cereal as I type this to you!!
I like to buy them fresh and then wash them several times. Put them on a paper towel. Then, I put the berries on a cookie tray and place them in the freezer. Once frozen, I put them in a ziplock freezer bag. Frozen blueberries are best to put in recipes for muffins! And I even put them frozen in my cereal, they soon thaw out in the milk and they are so good!!
I'm going to surprise my stomach (lol) and add blueberries to the shopping list! With or without cheesecake, it's one of the few fruits I enjoy.
Now, that photo of your salad has me practically salivating. For some reason, I've been making salads practically every day.
